So I’m guessing you’re here for one of maybe a few different reasons. 1- Like me, you love avocado anything. You don’t really care what it’s on, you’re all in. 2- You love hash browns and topping them with avocado is like a new exciting adventure you just had to check out. Or 3- you’re bored with your current avocado toast situation and you’re looking to elevate your breakfast to the next level. This Hash Brown Avocado Toast was one of those lightbulb recipes… you know, when you’re staring in your fridge trying to figure out what to eat, and suddenly the ah-ha’ moment hits. I knew I had some of my favorite frozen cauliflower hash browns from Strong Roots in my freezer, and of course I always have avocados and homemade vegan parmesan cheese in the house too.
So I started there and let the creativity fly. This recipe may have started out as a try-it-and-see-where-this-goes kinda recipe, but the fact that I’m dedicating a whole blog post and sharing it with you means that I am that certain you will love it too.

Ingredients

Frozen hash browns (I used Strong Roots Cauliflower Hash Browns!)

1-2 tablespoons olive/avocado oil

1-2 avocados, sliced/mashed

broccolini/broccoli florets
-
1 cup brussels sprouts, sliced in half

everything bagel seasoning
-
vegan parmesan cheese
-
microgreens
Instructions
- Make the hash browns according to package directions.
- Heat a large skillet over medium heat. Add the oil. Sautee the broccoli and brussels sprouts, tossing occasionally until they are soft and tender, but not mushy, then set aside
- Slice/mash your avocado.
- Add the sliced/mashed avocado on top of the hash browns, then top with sauteed brussels sprouts and broccoli.
- Sprinkle, to taste, everything bagel seasoning and vegan parmesan cheese over top.
- Garnish with fresh microgreens.
