This raw Almond Flour Chocolate Chip Cookie Dough Bites recipe is gluten-free, vegan, naturally sweetened, and grain-free made with almond flour. This recipe only requires 10 minutes and 6-ingredients for the perfect sweet treat!
I’m a huge fan of cookie dough. Sometimes I’d rather eat the dough than the baked cookies… especially when it comes to gluten free cookies- iykyk There’s just something, almost naughty about eating the dough 😆 so why not just make them in delectable little bites ready to enjoy in just 10 minutes?
The Cookie Dough Ingredients
Traditionally in the past, eating cookie dough was a no no. Maybe that’s why it feels naughty. You can’t eat raw eggs in the cookie dough, and raw flour contained risk for germs an bacteria as flour isn’t treated. Luckily this Almond Flour Chocolate Chip Cookie Dough Bites recipe is safe to eat raw because there’s no eggs and I’m using almond flour to rid the worry of contamination. 🙅🏻♀️
Almond flour. In this cookie dough recipe I’m using blanched almond flour. You can used unblanched also- your cookie dough will just come out a bit darker. You get all the benefits of almonds in this sweet treat while ditching the worry of germs and bacteria from eating raw dough.
Peanut butter. The peanut butter adds a healthy, sticky protein boost to hold the dough together without the use of butter.
Maple syrup. Adds some natural sweetness to this cookie dough of course!
Dark chocolate chips. Make sure they are dark to cut back on the sugar and don’t contain milk.
Pure vanilla extract. Adds a delicious vanilla flavor.
Salt. Brings out the sweetness of the maple syrup.
How To Make This Cookie Dough
This cookie dough recipe couldn’t be easier to make. Simply add the almond flour, peanut butter, maple syrup, pure vanilla extract and salt into a medium bowl and stir to combine until the cookie dough forms and there’s no dry almond flour left.
Variations
Swap out the almond flour for another nut/seed flour, such as sunflower seed flour. If you’re avoiding almonds, grinding raw sunflower seeds into a fine flour is a perfect alternative.
Switch the peanut butter for sunflower seed butter, cashew butter, or almond butter instead!
Substitute agave syrup for the maple syrup if desired.
Use mini chocolate chips or regular sized chocolate chips as seen in this recipe. The Enjoy Life Brand makes mini chocolate chips that I love! You can also use semi-sweet chocolate chips if you prefer.
Other Ways to Enjoy This Cookie Dough
Aside from just snacking on these little bites as is, you can also use them on top of my Cookie Monster Smoothie Bowleither in ball form or just crumbled as shown.
