These gorgeous speckled Robin’s Egg White Chocolate Covered Almonds are the perfect whimsical healthy-ish treat for Easter! They are made vegan using dairy-free white chocolate melted with a little coconut oil and perfectly colored with blue and green spirulina powder to keep this sweet snack dye-free. Speckle with melted dark chocolate and you have a fun Easter candy snack everyone will love! 💙
Are these not the cutest little edible robin’s eggs?! I’m totally swooning over how this sweet snack turned out and swooning even more about how easy they are to make! Ok, so they are a little tedious and time consuming, but it’s a super fun edible craft to do for Easter with your kids! When the idea of making these white chocolate covered almonds first popped into my head, I thought about making them as an array of pastel colors, for spring, but after my kids and I discovered a nest in our yard with the most gorgeous robin’s eggs 🪺, I was just in awe and took it as a sign to make all the almonds that beautifully speckled robin’s egg blue.
The ingredients are simple. You only need 5-6 ingredients to make these Robin’s Egg White Chocolate Covered Almonds.
Raw, skinless (blanched) almonds. I just happened to discover marcona almonds recently and OMG how perfect they are egg shaped! I had major heart eyes when I discovered these 😍. They are absolutely perfect for making these white chocolate candies. I found them at the grocery store, but you can also buy them on Amazon. The ones I happed to find were roasted with a little oil and salt, which actually gave a nice salty sweet flavor to these robin’s eggs! But you can use raw, unsalted and oiled macron almonds as well. AND if you can’t find them, regular ol’ WHOLE blanched almonds will do just fine ;). Just make sure they are whole almonds.
Vegan white chocolate. This can be a little tricky to find. There are a few brands out there, but my favorite so far is Enjoy Life Mini White Baking Chips. I haven’t been able to find this in stores yet, so I order my white chocolate chips on Amazon.
Coconut oil. Using 1 teaspoon of coconut melted with the white chocolate chips allows the white chocolate to be extra smooth and creamy.
Spirulina powder. To make the perfect robin’s egg blue, it’ll be a little bit of an art project, but don’t worry, it’s easy. I don’t give specific measurements for the spirulina powder I used, just start off slow and add more until you like the color. Now, to make the perfect robin’s egg blue you’ll need blue spirulina powder as well as green spirulina powder. More stores are carrying this amazing superfood algae powder now because it’s rich in vegan protein, fiber, omega amino acids, flavonoids, vitamins A, B complex, C, K, and biotin and minerals, phytonutrients and antioxidants. The blue is a bit harder to find in person, so definitely check out Amazon.
If you’re wondering about the taste, there really isn’t a seaweed, algae flavor either. It actually pairs quite nicely with the white chocolate and instead of using artificial food coloring and adding chemicals into your body, we’re actually going to be adding some of those superfood benefits that comes along with spirulina. A beautiful sweet snack with benefits?! I’m in!
Dark chocolate chips. You will only need 1 tablespoon of dark chocolate chips to use for the speckles on the eggs. Again, you’ll add a little bit of coconut oil to the chocolate to make it extra smooth a little bit thinner to be able to flick on the eggs using a paintbrush. I told ya it was a fun craft too, right?! 🎨🖌️
To make these Robin’s Egg White Chocolate Covered Almonds, all you’ll need to do is melt the white chocolate chips with 1 teaspoon of coconut oil. I like to use the double broiler method for this one because the vegan white chocolate can still have lumps in it if you melt it in the microwave. Don’t worry, you don’t have to have a fancy double broiler pot, I just used a glass bowl over a saucepan of boiling water. Once the white chocolate chips are smooth and all melted, the fun begins! Whisk in little bits of the blue spiriulina powder at a time until you get a nice rich blue color. Then add smaller amounts of the green spirulina powder until you achieve a robin’s egg blue. If you don’t feel like doing that, these almonds would still be amazingly gorgeous just using the blue spirulina powder.
Add a few of the almonds at a time to the bowl of melted blue white chocolate and coat each almond completely using a fork. Lift the almonds out of the bowl with the fork, tapping the fork on the side of the bowl to remove excess (dripping) chocolate and then place each almond onto a parchment-lined baking sheet. Repeat until all the almonds are coated. You’ll have to work a little quickly- as the chocolate cools it hardens. If that happens, you can pop it into the microwave for a few seconds to remelt it. DON’T microwave for too long or you’ll cook the chocolate and it won’t be runny.
After all of the almonds are coated with the blue white chocolate, place the baking sheet into the freezer for about 20-30 minutes to harden. After they are hardened, you can trim the excess white chocolate from around the edges to re-define the egg shape. I did this using a small knife. I’m kind of a perfectionist though, so if you don’t feel like it, skip it 😜.
Next, melt a tablespoon of dark chocolate chips with a little bit of coconut oil (like 1/4 teaspoon-ish) in the microwave in a small bowl. Using a square paint brush, dip the tip into the melted dark chocolate and then using your finger, flick it onto the eggs. You can watch the video in this post if you need help.
Allow the dark chocolate to dry and then much away! You can also use these to decorate all of your favorite Easter treats, like my No-Bake Chocolate Bird Nest Cookies! I have some other ideas of how I want to use all of these almonds, other than just snacking on them of course… so keep an eye out for those recipes too!
These chocolate covered almonds are pretty easy to store, you can keep them out on your counter uncovered for snacking as you walk by, haha, or you can keep them stored in the fridge in an airtight container.
