A healthy spin on your favorite childhood cereal! This Cinnamon Sugar Cookie Cereal is made with only 7 ingredients and is gluten-free, grain-free, vegan, and ready in just 30 minutes! And if you don’t feel like enjoying with milk, they make the perfect low-sugar snack!
It’s a Monday, and all I want is a big jar of this healthy Cinnamon Sugar Cookie Cereal. Ok, maybe my eyes are bigger than my belly, so I guess I’ll settle for a bowl, but I think you’ll know what I mean when you make it. Definitely a get-you-outta-bed type breakfast.
This is totally the new way to cereal, so I hope you’ll give it a go! My “Cookie Crisp” Cereal was a HUGE hit on Instagram and I loved seeing all the recreations of it, so I decided to make another flavor! By popular vote in my stories, you chose cinnamon, and what a wise choice my friends because cinnamon is for sure one of my favorite spices.
So grab yourself a mason jar, your favorite tiny cookie cutter, a baking sheet, bowl and a spoon and let’s make this Cinnamon Sugar Cookie Cereal together!
Now if you’re new to the whole making your own cereal at home trend, before you completely write it off as being too tedious, I promise it’s easier than it sounds and you’ll definitely get more than a bowl or two of cereal… unless you’re the cookie monster and eat like the biggest bowls of cereal ever.
Next, you’ll need an oven, your favorite plant milk and 7 simple ingredients:
☆ almond flour
☆ ground cinnamon
☆ baking powder
☆ pinch of salt
☆ pure vanilla extract/paste
☆ maple syrup
☆ peanut butter
Now there isn’t any refined sugar in the cereal as the title might suggest, but the maple syrup gives it just the right amount of sweetness to compliment the cinnamon I had to call this Cinnamon Sugar Cookie Cereal. If you want to, you could lightly sprinkle the cookies with coconut sugar before baking, but I like to keep them a bit on the less sugary side.
The thing is, this Cinnamon Sugar Cookie Cereal is made with real, whole foods. It’s not filled with a bunch of empty calories and who knows what else like other cereals on the shelves. So you don’t need as much to feel full and satisfied. A small bowl was just enough for me actually. So you’ll end up getting more than you think from one batch.
It doesn’t take that long to cut out these little mini cookies either. Just roll out your cookie dough between two pieces of parchment paper, which is deliciously edible raw too by the way, use about an inch wide cookie cutter and cut out your cookies. These cookies won’t spread while baking so no need to space them far apart on your baking sheet either. It helps to rinse the cookie cutter off if it starts to get sticky. Then simply bake for about 10-12 minutes, and enjoy!
