This thick and creamy homemade Roasted Cherry Tomato Hummus is the perfect snack or appetizer made with fresh cherry tomatoes that are roasted in the oven and then blended with garbanzo beans, tahini, olive oil, garlic, lemon juice, and salt. Serve with crackers, chips, pretzels, or fresh cut veggies!
As we kick off Fall football season, I thought it would be a good idea to add this Roasted Cherry Tomato Hummus to the blog! This easy and flavorful hummus recipe is the perfect dip to snack on while you’re watching the game, and also a great way to use up some of those cherry tomatoes from your summer garden!
Cherry tomatoes. I used cherry tomatoes from my summer garden. There’s something magical about homegrown tomatoes- they are so much more flavorful! If you’re also looking for a way to use up your garden cherry tomatoes, this hummus is a great option. Otherwise, you may buy cherry tomatoes from the store. I would suggest organic, as they will have more flavor than non-organic.
Garbanzo beans. You will need one 15 ounce can of drained garbanzo beans (chickpeas).
Tahini. I used 3/4 cup of tahini in this hummus recipe. If you like a thinner hummus, you can add less tahini or add a little water.
Olive oil. This hummus recipe calls for 2 tablespoons of olive oil. You may drizzle more on top before serving if desired. Be sure to use a high quality olive oil for the best results.
Garlic. I used pre-minced garlic in a jar for ease of use in the recipe. You may use fresh garlic cloves, minced to equal 1 teaspoon worth.
Lemon juice. You can certainly use fresh squeezed lemon juice, but I used bottled pure lemon juice NOT from concentrate. You’ll need 1 tablespoon of lemon juice.
Salt. You’ll need a total of 2 teaspoons of salt for this hummus recipe, 1 teaspoon for sprinkling on the cherry tomatoes before roasting and the other to blend with the other hummus ingredients. I don’t like to overly salt my food, so you may add more to taste if desired.
Basil. Basil is optional for this recipe, just to use as a garnish on top of the hummus, but it also adds a nice flavor paired with the cherry tomatoes.
Wash the tomatoes and place them onto a baking sheet. Sprinkle with 1 teaspoon of salt and roast in the oven for 20 minutes, until they burst and start to turn brown and wrinkly.
Meanwhile, drain the chickpeas and add them to a food processor/blender along with the tahini, garlic, olive oil, lemon juice, and remaining teaspoon of salt.
Allow the tomatoes to cool slightly and then add them to the food processor with the rest of the ingredients.
NOTE: Reserve some roasted cherry tomatoes for garnishing the hummus if desired.
Blend the hummus until smooth. TIP: add 3-5 ice cubes to help the hummus move along and have an extra smooth and creamy texture!
Serve with crackers, chips, pretzels, or fresh veggies!
Keep any leftover hummus stored in an airtight container in the fridge for up to 5 days.
