Almond Flour. Gives these bites a tender texture and a light nuttiness while keeping them gluten‑free. And using almond flour makes these bites safe to eat raw, without having to heat treat the flour.

Almond Butter. Acts as the glue, adding healthy fats and a creamy consistency. I used white almond butter but any almond butter will do, preferably unsweetened and with just 1 ingredient- almonds!

Cinnamon. The star spice that gives churros their signature flavor. I like to use ceylon cinnamon for a more delicate, mildly sweet cinnamon flavor!

Salt. Just a pinch to balance and enhance the sweetness. I like to use Himalayan pink salt in all my recipe for a milder salt flavor.

Maple Syrup. Natural sweetness with a hint of caramel flavor, and it keeps the mixture pliable.

Vanilla. Pure vanilla adds a warm, aromatic depth that enhances the cinnamon’s sweetness and brings a bakery‑style richness to these churro bites.

Cane Sugar. For that classic churro coating—just enough to make them sparkle and satisfy your sweet tooth. You can roll them in monk fruit sweetener as a refined sugar-free option!

In a mixing bowl, combine the almond flour, almond butter, cinnamon, salt, maple syrup, and vanilla. Stir until a dough forms—it should be soft and slightly sticky but easy to roll. Scoop out about a 1/2 tablespoon of dough at a time and roll it into balls.

Yep! I used blanched almond flour but feel free to use unblanched (skin-on) almond flour. If you’re using skin-on almond flour, they may turn out a little darker in color, but that’s not an issue since the cinnamon colors them darker anyway 😉 .

Yes! Peanut butter, cashew butter, or even sunflower seed butter work well. Just note that each will slightly change the flavor profile.

Ingredients

1 1/2 cups almond flour

1/4 cup almond butter (I used white almond butter)

2 teaspoons cinnamon (I used ceylon cinnamon)

1/4 teaspoon salt

1/4 cup pure maple syrup

1 teaspoon pure vanilla extract (I used this one)

1/21 cup cane sugar or sugar substitute (see notes)


Instructions

  1. In a mixing bowl, combine the almond flour, almond butter, cinnamon, salt, maple syrup, and vanilla. Stir until a dough forms—it should be soft and slightly sticky but easy to roll. Scoop out about a 1/2 tablespoon of dough at a time and roll it into balls.
  2. Add the cane sugar to a shallow dish, then roll each bite in the mixture until fully coated. Chill them in the fridge for about 15–20 minutes to firm up—or enjoy right away if you’re feeling impatient! Keep them stored in an airtight container in the fridge for up 5 days.
