What is Fruit Leather?

Fruit leather is simply pureed fruit that’s spread into a thin layer and slowly dried until it’s no longer sticky. Unlike many packaged fruit snacks, this homemade fruit leather contains real fruit without artificial colors, corn syrup, or preservatives.

Ingredients

Nectarines. Use ripe, fragrant nectarines that give slightly when gently squeezed. The sweeter the fruit, the sweeter your finished fruit leather will be without needing any added sweetener. I used Family Tree Farms donut nectarines and they were so sweet and juicy which yielded the most delicious fruit leather!

💡Great news! You can leave the skins on—they blend beautifully and add extra fiber and nutrients.

Lemon Juice. Fresh lemon juice brightens the flavor while also helping prevent the nectarine puree from overly browning during baking. You may use bottled lemon juice, but make sure it’s purely pressed lemon juice 🍋.

💡 This fruit leather will darken considerably as it dries out, but it shouldn’t completely lose its dark orange hue.

Equipment

You will need a high speed, high quality blender to make this recipe. I love my Vitamix blender!

How to Make Nectarine Fruit Leather

Step 1

Preheat your oven to 170°F. Line a large baking sheet with parchment paper or a silicone baking mat. Make sure the parchment paper lies completely flat.

Step 2

Wash and chop the nectarines. Add the nectarines and lemon juice to a high-speed blender and blend until completely smooth and no nectarine skins remain.

Step 3

Pour the puree into a saucepan and heat over medium-high heat until the puree thickens and bubbles, stirring frequently.

Pour the puree onto the prepared baking sheet. Using a spatula or the back of a spoon, spread into a thin, even layer approximately ⅛-inch thick. Try to keep the edges slightly thicker since they dry more quickly.

Step 4

Bake for 3-5 hours, depending on your oven and the thickness of the puree.

Step 5

Allow the fruit leather to cool completely. Cut into strips using scissors or a pizza cutter. You can cut the fruit leather and parchment paper together and roll up for easy storage, or you can peel the fruit leather from the parchment paper and then cut into strips.

Storage

This nectarine fruit leather is best stored in an airtight container at room temperature for up to 1 week. Refrigerate for up to 3 weeks, but bring to room temperature before enjoying to avoid cracking. Separate layers with parchment paper if it’s very sticky before stacking.

How To Tell When The Fruit Leather Is Done

  • It no longer feels wet.
  • The center isn’t sticky.
  • It peels easily from the parchment.
  • It bends without cracking.

Tips for Perfect Fruit Leather

  • Use very ripe nectarines for the sweetest flavor.
  • Spread the puree evenly to prevent some sections from drying before others.
  • Spread the puree thin, approximately ⅛-inch thick, for the best results and shorter baking time.
  • Make the edges thicker as they will cook/dehydrate faster.
  • Rotate the pan halfway through baking if your oven has hot spots.
  • Avoid overbaking, which can make the fruit leather brittle and crunchy.
  • Let cool completely before removing from the parchment.

Frequently Asked Questions

Do I have to peel the nectarines?

No. The skins blend completely smooth and add fiber, nutrients, and beautiful color.

Can I use frozen nectarines?

Yes. Thaw completely and drain any excess liquid before blending.

Why is my fruit leather still sticky?

It likely needs additional drying time. Continue baking in 20-30 minute increments until the center feels dry but still flexible.

Why did my fruit leather crack?

It was likely baked too long. Remove it once it bends easily without sticking.

Can I make this without lemon juice?

Yes, although the lemon juice helps preserve the bright color and balances the sweetness.
