I think I am going to make the theme of this fall and winter, charcuterie. To be honest, I haven’t put together charcuterie boards prior to this year, at least not like I have been recently- and quite frankly… what have I been doing??! Lol. Let me tell you a few reasons why charcuterie boards rock my world.
1- You can make them whatever you want them to be. It’s 2019, let’s ditch the “traditional” way of making them with meat and cheese and opt for a combination of other foods, including your favorite dessert items!
2- They are super duper easy to put together, no really. You literally go to the store (or in this case shopping at Suncore Foods) and pick your favorite snack/dessert items and display them on a pretty board or platter. You’ll surely impress your guests 😉
3- They are just gorgeous, yet all so different! Check out my Autumn Charcuterie Board or my Italian-Inspired Charcuterie Board. You pretty much have free rein to be artistic, and if you’re not very artistic, well I assure you- you’ll fool some people, hehe.
Now let’s chat about all the delicious goodies I chose to add to this healthy, vegan, gluten-free Dessert Charcuterie Board, because I know you’re dying to know. It starts with a vegan chocolate and caramel dip as the foundation. First I headed straight to Suncore Foods to pick out some superfood snacks that would taste amazing on their own but also could be dipped in chocolate or caramel. For this particular Dessert Charcuterie Board I chose White Pitaya Dragon Fruit Chips and Red Pitaya Dragon Fruit Chips, which by the way I’ve never seen anywhere else y’all, and they are so good! And did I mention loaded with antioxidant, antibacterial, and nutritional properties to help boost the immune system, improve metabolism, and smooth the digestive process?
I also chose to incorporate Suncore Foods Rose Apple Chips, also believed to have magical healing properties, Suncore Foods Toasted Coconut Chips, which are baked, not fried, and contain absolutely no preservatives. Every serving of their coconut chips can boost your brain activity and lower your cholesterol- shhhh… we won’t tell your guests that they are actually reaping a ton of health benefits by indulging in this Dessert Charcuterie Board wink!
I also piled on Suncore Foods Longan Puffs, sweet enough to eat on their own, but delicious dipped in the chocolate and caramel sauces or even incorporated into cookies like I did in my Lemon Longan Cookies. I have never had Longan, and they are nearly impossible to find fresh in local grocery stores, so I’ve very thankful to have these delicious little antioxidant, antiviral, anti-aging rich puffs from Suncore Foods. Longan can also offer health benefits such as boosting immunity, smoothing the digestive process, and reducing stress, fatigue, insomnia, and anxiety (I be popping’ these like crazy around the holidays, yo! LOL).
I then bought some fresh grapes, strawberries and cranberries (sugared them to fit better on a dessert charcuterie board) and proceeded to raid my pantry to see what other goodies I could throw on, added some fresh flowers and served it up! The perfect gluten-free, vegan, healthy dessert charcuterie board for entertaining over the holidays. Offer a variety of healthy sweet treats and impress your guests with this gorgeous, yet simple dessert platter! Perfect for parties, showers, girl nights, game nights, bible studies, or a fun date night in!
1. Lay out all your chosen foods, get creative and don't forget to pack it full! Use bowls for nuts, seeds, dips, coconut chips (don't forget to wash any fresh fruit).
2. Melt your dark chocolate/chips for about 30 seconds in the microwave, stir and if needed microwave for an additional 15 seconds until completely smooth.
3. Make your vegan caramel. Melt the coconut oil and maple syrup together in a small saucepan over medium heat, then whisk in the almond butter and pumpkin pie spice. Whisk constantly until it starts to thicken, then remove from heat.
4. Garnish with fresh flowers if desired.
