The chapters are organized by topics like egg swaps, dairy and butter alternatives, batter consistency and natural sweeteners, so you learn to problem-solve while building your baking repertoire. All of the dessert recipes included in this book are gluten-free and vegan, but there are also a handful of recipes that are grain-free too! While you might not be familiar with some of the specialty ingredients used in this book, like banana flour for instance, I really urge you to step out of your comfort zone and try them! These specialty food items have become some of my favorite to use in the kitchen. Other ingredients are more common, like banana, avocado, applesauce, and nut/seed butter.
