These 5-ingredient chewy White Chocolate Amaretto Trail Mix Truffle Bars are made with your favorite trail mix stirred together with a dairy-free melted white chocolate Amaretto mixture then chilled to set up and sliced into bars for a deliciously nutty, sweet treat!
Welllll… it took me quite the recipe development to get here, lol. They seem so simple, right?! Well they are, don’t worry. With only 5 ingredients and no baking required, they are sure to be one of the easiest dessert snacks you will make. However, they didn’t start out on my end to be trail mix bars. My intention was to make these into truffles, but unfortunately they would melt into a blob every time I tried to roll them into balls.
Then I thought maybe I’d make little square white chocolate bites, like candies, but those melted after I cut them too. I probably added too much liquid or needed to add coconut oil instead of butter or something, but I HATE wasting food, so I decided to use what I had and make them into these White Chocolate Amaretto Trail Mix Truffle Bars, and wow… best “mistake” ever! They have that chewy, soft truffle texture with paired with the crunchiness from the nuts and OMG they are so good!
The Diary-Free White Chocolate Amaretto
Until recently, there really hasn’t been a great dairy-free, allergen-friendly white chocolate- not that I have found at least. Enjoy Life Foods came out with their mini white chocolate chips and omg white chocolate desserts are back on the table! They are so good and really have a nice flavor. (not sponsored, just thought I’d share!) They melt great, they stay white when melted alone and they work perfectly for all the sweet treats that call for white chocolate, like my Oatmeal Gingerbread Thumbprint Cookies with White Chocolate Nog Ganache or my Melted Snowman White Chocolates.
The Amaretto is totally optional, however it does add a fantastic flavor, especially paired with the white chocolate. Also, these bars are pretty sweet on their own, which is why I didn’t completely cover them in white chocolate (the kind I used as sugar added). So I decided to just drizzle them with white chocolate to put the final truffle touch on these bars, but they are totally good without the drizzle too.
The Trail Mix
You can use your favorite trail mix in these bars. I used a trail mix that includes almonds, peanuts, cashews, dried cranberries, dried cherries, and chocolate chunks. I picked the chocolate chunks out because I was afraid it would melt and turn my bars brown, but if you don’t mind that you can leave them in… although that kinda overtakes the whole WHITE chocolate theme here, haha 😉
How to Make These Bars
It’s so easy to make these White Chocolate Amaretto Trail Mix Truffle Bars with just 5 ingredients: diary-free white chocolate chips, vegan butter, plant milk of choice, Amaretto, and trail mix. You’ll start by lining an 8×8 baking pan with parchment paper then set aside. In a medium saucepan, melt the white chocolate chips, butter and milk over low heat. Once the chcolate chips have started to melt, whisk continuously until you have a creamy melted chocolate. Add the Amaretto if using and whisk.
Add 3 cups of trail mix to a medium-large bowl. Pour the melted white chocolate mixture over top and stir to coat all of the nuts. Press the mixture in the baking pan and spread it out to fill the whole pan evenly. Place in the freezer to set up for about 1 hour. Slice into bars and enjoy! Keep stored covered in the fridge or freezer.

Ingredients
2 cups dairy-free white chocolate chips (I used Enjoy Life brand)
3 tablespoons vegan butter
4 tablespoons plant milk
4 tablespoons Amaretto (optional but recommended for flavor!)
3 cups trail mix (without chocolate)
Instructions
Line an 8x8 baking pan with parchment paper and set aside.
In a medium saucepan, melt the white chocolate chips, butter and milk over low heat. Once the chcolate chips have started to melt, whisk continuously until you have a creamy melted chocolate. Add the Amaretto if using and whisk.

Notes
* If your trail mix has chocolate in it, it will likely melt and turn your bars brown when you stir in the melted white chocolate mixture so I suggest taking it out or finding a trail mix without it. These bars would still taste delicious if you do decide to leave it in though 😉
