How To Make Cosmic Brownie Cookie Dough Date Bites
Chop the pitted Medjool dates and then add them to a food processor along with the almond flour, cacoa powder, almond butter, vanilla, and salt. Pulse (not blend!) the mixture until everything is well combined and a thick, fudgy dough begins to form.
If the mixture seems too dry or crumbly, add dairy-free milk 1 tablespoon at a time and pulse until the mixture comes together. You want the dough to be soft and fudgy but firm enough to roll.
Transfer the brownie cookie dough to a bowl. Fold in the candy-coated chocolate chips by hand or gently with a spatula so they remain intact.
Scoop approximately 1 to 1+1/2 tablespoons of dough at a time and roll between your palms to form a ball. Repeat with the remaining dough. If desired, gently press a few additional candy-coated chocolate pieces into the outside of each bite for that extra colorful cosmic brownie look.
Place the bites in the refrigerator for about 20–30 minutes to firm up before enjoying.

Tips for the Best Brownie Date Bites
- The texture of dates can vary quite a bit. If your dates are very soft and sticky, you may not need any dairy-free milk at all. Start without it and only add milk if your dough isn’t holding together. My dates were VERY soft and I only needed 1 tablespoon of oat milk.
- If your Medjool dates are on the dry side, soak them in hot water for about 5–10 minutes. Drain and pat them very dry before adding them to the food processor.
- Be careful not to add too much milk. The dough should resemble thick brownie batter or chocolate cookie dough rather than a loose mixture.
- Don’t process the candy-coated chocolates! Folding them in by hand keeps their colorful shells intact and gives the bites a little crunch.

Can I use peanut butter instead of almond butter?
