These No-Bake Cosmic Brownie Cookie Dough Date Bites are rich, fudgy, chocolatey, and filled with colorful candy-coated chocolate pieces (dye-free!). Made with Medjool dates, almond flour, cocoa powder, and almond butter, these easy brownie date bites have all the nostalgic flavor of a cosmic brownie transformed into a wholesome no-bake cookie dough treat.

- 1 cup packed soft Medjool dates, pitted (about 10-12 large dates)
- 1 cup fine, blanched almond flour
- 1/3 cup unsweetened cacoa powder
- 1/3 cup creamy almond butter
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1-3 tablespoons unsweetened dairy-free milk, as needed
- 1/3-1/2 cup mini rainbow candy-coated chocolate chips, plus more for topping if desired
Instructions
- Chop the pitted Medjool dates, measure 1 cup packed, and then add them to a food processor along with the almond flour, cacoa powder, almond butter, vanilla, and salt. Pulse (not blend!) the mixture until everything is well combined and a thick, fudgy dough begins to form.
- If the mixture seems too dry or crumbly, add dairy-free milk 1 tablespoon at a time and pulse until the mixture comes together. You want the dough to be soft and fudgy but firm enough to roll.
- Transfer the brownie cookie dough to a bowl. Fold in the candy-coated chocolate chips by hand or gently with a spatula so they remain intact.
- Scoop approximately 1 to 1+1/2 tablespoons of dough at a time and roll between your palms to form a ball. Repeat with the remaining dough. If desired, gently press a few additional candy-coated chocolate pieces into the outside of each bite for that extra colorful cosmic brownie look.
- Place the bites in the refrigerator for about 20–30 minutes to firm up before enjoying.
