I wanted to make a caramel apple treat and thought about making last year’s viral date wrapped caramel apple dipped in melted chocolate, but I kinda wanted to make my own version of a caramel apple-inspired recipe. I wanted to make something easy, non-messy, and healthy but that still tasted like a caramel apple in every bite.
Instead of traditional caramel sauce, the creamy dressing gets its naturally sweet caramel-like flavor from Medjool dates blended with vanilla soy yogurt, cinnamon, and a pinch of salt. Green apples. I love using Granny Smith apples for this recipe because they’re extra crisp and tart. That tartness is the perfect contrast to the naturally sweet date caramel dressing. Leave the skins on for extra color, texture, and crunch.
Medjool dates. Dates are used two ways in this recipe. Some are blended into the dressing to give it that rich caramel-like sweetness, while additional chopped dates are folded into the salad for little chewy bites throughout. Look for soft, plump Medjool dates for the best results.
Vanilla yogurt. Dairy-free vanilla yogurt creates the creamy base for the date caramel dressing while adding a little extra vanilla flavor and sweetness. It also helps make the dressing creamy without needing sugar-filled whipped topping or pudding mix. I used a vanilla soy-based yogurt, but you can use your favorite vanilla flavored plant-based yogurt.
Oat milk. A small amount of oat milk helps the dates blend into a smooth, pourable dressing. You can add a little more as needed depending on the thickness of your yogurt and dates.
Vanilla extract. A splash of vanilla complements the caramel notes in the Medjool dates and gives the dressing a richer flavor. If you use plain dairy-free yogurt, you’ll definitely want to add 1 teaspoon of pure vanilla extract.

How to Make Caramel Apple Date Salad
Step 1: Make the Date Caramel Dressing
Add the Medjool dates, vanilla yogurt, oat milk, vanilla extract, cinnamon, and salt to a high-speed blender. Blend until completely smooth and creamy.
If the dressing is too thick to blend or pour, add additional oat milk one tablespoon at a time until you reach a thick, creamy consistency. You don’t want it too thin or runny—the dressing should cling to the apples.
Step 2: Chop the Dates
Remove the pits from the remaining Medjool dates and chop the dates into small pieces. Roughly chop your mixed nuts if they aren’t already chopped.
Step 3: Chop the Apples
Core the green apples and chop them into small, bite-sized pieces. There’s no need to peel them! (But wash them first!) Keeping the bright green skin makes the finished salad especially pretty while adding even more crunch.
Step 4: Toss Everything Together
Add the chopped apples and dates to a large bowl. Pour the creamy date caramel dressing over the top and gently toss until everything is evenly coated.
Fold in the chopped nuts and chocolate chips. Refrigerate for 20-30 minutes.
Step 5: Garnish and Serve
Transfer the caramel apple date salad to a serving bowl and top with additional chopped dates, mixed nuts, chocolate chips and a sprinkle of cinnamon, if desired. Serve immediately or refrigerate until you’re ready to enjoy!

- Don’t add too much oat milk at once. Start with the amount listed in the recipe card (1/4 cup) and only add more if necessary. The date caramel dressing should be creamy and thick rather than runny.

- 1/2 cup chopped mixed nuts

- 3/4 cup dairy-free vanilla yogurt
- 1/4 cup oat milk, plus more as needed

- Pit and chop the remaining 6 Medjool dates.
- Add the chopped apples and dates to a large mixing bowl.
