This Caramel Apple Date Salad is a creamy, crunchy Fall treat made with crisp green apples, chewy dates, chopped mixed nuts, chocolate chips and the most delicious homemade date caramel dressing. It has all the flavors you love about a caramel apple transformed into an easy, scoopable apple salad!

For the Salad
- 3 medium Granny Smith apples, chopped
- 6 Medjool dates, pitted and chopped
- 1/2 cup chopped mixed nuts
- 1/4 cup dairy-free mini chocolate chips
For the Date Caramel Dressing
- 8 soft Medjool dates, pitted (about 1 cup chopped)
- 3/4 cup dairy-free vanilla yogurt
- 1/4 cup oat milk, plus more as needed
- 1/2 teaspoon pure vanilla extract (use 1 teaspoon if using plain yogurt)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt

- Add the 8 pitted Medjool dates (about 1 cup chopped), yogurt, oat milk, cinnamon, salt, and vanilla extract to a high-speed blender. Blend until completely smooth and creamy. Add additional oat milk, one tablespoon at a time, if needed to help the dressing blend.
- Core and chop the Granny Smith apples into bite-sized pieces.
- Pit and chop the remaining 6 Medjool dates.
- Add the chopped apples and dates to a large mixing bowl.
- Pour the date caramel dressing over the salad and gently toss until everything is evenly coated.
- Fold in the chopped nuts and chocolate chips.
- Chill in the refrigerator for 20-30 minutes.
- Transfer to a serving bowl and garnish with additional chopped dates, mixed nuts, chocolate chips, and cinnamon, if desired.
- Serve immediately or chill in the refrigerator until ready to enjoy.
