Brussels sprouts get tossed in a little olive oil and pure maple syrup, then seasoned with salt and pepper. If you’re not vegan, you can use cooked, crumbled regular bacon, though I encourage you to try a plant-based option, such as crispy chickpeas or smoked tempeh which will also work well. You may also leave out the bacon bits altogether.

Ingredients

24 ounces brussels sprouts, washed and sliced in half

1 shallot, sliced

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon Himalayan pink salt

1/4 teaspoon ground black pepper

1/2 cup vegan bacon bits (see notes!)


Instructions

Preheat the oven to 400 degrees Fahrenheit. Wash and slice the brussels sprouts. Dry them well and then add them to a large bowl along with the sliced shallot, olive oil, maple syrup, salt, pepper, and bacon bits. Spread everything on a parchment-lined baking sheet and roast in the oven for 25-30 minutes, tossing halfway through. They are done when they are crispy. Serve right away. Leftovers may be stored in an airtight container in the fridge and reheated in the oven or air fryer.
