This easy dairy-free Pina Colada Smoothie is made with just 5 simple ingredients and is ready to enjoy in under 10 minutes! Simply blend together coconut milk, frozen pineapple, a frozen banana, pure vanilla extract, and pineapple juice for the perfectly smooth summer tropical smoothie!
Iβm always trying to come up with new smoothie flavors for the kids. It has been so hot here lately (like everywhere else) and weβre just craving alllll the cooling frozen treats. I impulsively bought a pineapple at the store the other day, and while there are so many other delicious pineapple recipes I could have made, I decided to transport us to the tropics ποΈ and keep it light and simple.
Coconut milk. I use lite coconut milk in this recipe for a lighter texture and flavor. You could use full fat coconut milk if preferred. I use canned coconut milk, not the kind you buy in the refrigerated section.
Pineapple. It’s best to use frozen pineapple in this smoothie recipe. I have made it with fresh and it tastes good, but I found the smoothie to be a better texture when using frozen pineapple.
Banana. Same as the frozen pineapple, it’s best to use a frozen banana for a thick and creamy smoothie, but you may use a fresh banana instead if you don’t have any frozen on hand.
Pure vanilla extract. I made this pina colada smoothie without the vanilla and I much preferred it with a touch of vanilla! Be sure to use pure vanilla extract and not imitation vanilla, as that’s not gluten-free.
Pineapple juice. Adds a little liquid to make blending easier while also adding a concentrated pineapple flavor. I like to buy pure pineapple juice NOT from concentrate.
The great thing about this Pina Colada Smoothie (other than it tastes amazing!) is that itβs super easy to make dairy free with the use of coconut milk. Using coconut milk satisfies both the milk and coconut component, after all, it wouldnβt be a pina colada without coconut π₯₯.
Simply blend all of the ingredients together until smooth and creamy! The coconut chips on top are totally optional if youβre looking for a crunch lol.
π Make sure you freeze a banana the day before. I always keep a bag of frozen bananas, peeled and split in half, in my freezer for smoothies and nice cream! Frozen bananas make summer frozen treats so creamy!
π₯ Put the coconut milk into the blender first. This will help keep the smoothie from getting stuck, and blending more smoothly.
πΉ While I think this smoothie is fantastic as a breakfast smoothie, you could swap out the pineapple juice for rum and make this as a nightly cocktail (or just keep the pineapple juice and enjoy it as a virgin pina colada π).
