These Fajita Roasted Potatoes are the BEST easy side dish and are made with only 5 ingredients! I contemplated creating taco roasted potatoes or fajita roasted potatoes, and while you can certainly make these Fajita Roasted Potatoes without the bell pepper and onion to turn them into a simple taco roasted potato recipe, I highly recommend adding the pepper and onion because this recipe is dynamite! ๐๐ป
I LOVE Mexican food. Generally when I go out to a Mexican restaurant my go to order is vegetable fajitas with corn tortillas and of course allll the guacamole ๐. I wanted to create a delicious Mexican potato side dish for the Healthy Little Vittles Blog, so I thought Fajita Roasted Potatoes recipe would be delish! And I was right ๐.
The Ingredients
Potatoes. For this recipe you’ll want to use gold potatoes. I used petit gold potatoes, but if you can’t find those at your grocery store, you can buy regular sized Yukon gold potatoes and just cut them into smaller chunks. You will need 24 ounces, or roughly 4 cups of potatoes.
Olive oil. For this recipe you’ll need 3 tablespoons of olive oil. You may use another oil if you prefer.
Taco seasoning. This recipe calls for 1/4 cup of mild taco seasoning. My favorite is Siete Foods Mild Taco Seasoning (not sponsored), but you can use your favorite gluten-free taco seasoning or even make your own! I’m a wuss when it comes to spicy food, haha, so I opt for mild, but if you like some heat, feel free to use medium or spicy taco seasoning!
Bell pepper. I chose to include green, red, and orange bell pepper. You can use just one color or two, all three or even use yellow bell pepper too. The main point is that you will need 1/2 a cup of each or 1 and 1/2 cups of chopped bell pepper total.
Sweet yellow onion. The recipe calls for 1 cup of chopped onion, which is approximately 1/2 a large yellow onion.
How to Make Fajita Roasted Potatoes
This fajita spiced oven potato side dish is seriously so easy to make. First, preheat your oven to 425 degrees Fahrenheit. Next, wash and slice the potatoes in half and add them to a large bowl. Add the chopped bell pepper and onion to the bowl.
Drizzle the olive oil over top and then sprinkle in the taco seasoning. Toss to combine well and coat all of the potatoes with the taco seasoning.
Spread the potatoes, pepper, and onion on a parchment-lined baking sheet and then roast in the oven for 30 minutes.
Enjoy warm with a squeeze of lime juice, side of guacamole and vegan sour cream! Feel free to garnish with fresh cilantro too, if desired.
How To Enjoy These Fajita Roasted Potatoes
You can certainly just eat them as is, or serve them alongside some guacamole and vegan sour cream. You could even make a batch of my Vegan Nacho Cheese Sauce for drizzling over top or dipping. Maybe you could even sprinkle some vegan shredded cheese over top, though I think these Fajita Roasted Potatoes are delicious without the cheese. But I definitely recommend the guacamole and sour cream.

Instructions
