This Sweet Chili Lime Grilled Mango Salad is the perfect balance of sweetness, mind heat, and tang, and a medley of crisp and crunchy veggies. Plus, it’s packed with vitamins, antioxidants, and fiber to keep you feeling energized and nourished. 🌶️🌈💪
The Salad Ingredients
This simple salad is very customizable. You can swap out the shapes and sizes of produce used, you can add more of one ingredient if you really love it, or you can leave out the onions. After all, the grilled mango is what shines in this recipe.
Mango. In this recipe I used medium sized Honey (Ataulfo) Mangoes, but you can use any type of mango. Slice the mango around the large vertical pit in the middle and remove the mango flesh from the skin. I kept the mango in slices but you could also cube the mango and grill the mango up that way.
Cucumber. I used 2 mini cucumbers for this recipe. Feel free to use any cucumber you prefer, and even cut it how you like. I just like the rounds in this salad, not to mention baby cucumbers are adorable, aren’t they?!
Red onion. I am not a huge raw onion fan, but the onion in this Sweet Chili Lime Grilled Mango Salad is the perfect flavor to balance out the sweetness from the mangoes.
Cherry tomatoes. I cut the cherry tomatoes in half but you could leave them whole to cut back on prep time. You may also use grape tomatoes, or really any tomatoes you’d like.
Lime. You’ll be using 1/2 a lime for this recipe. Zest the lime into the salad for an extra limey zing that’s the perfect finishing touch. You can squeeze the juice from 1/2 the lime onto the salad before serving too- no food waste here!
Ginger. I used a whole piece of ginger that I peeled and grated into the salad. I find it’s fresher than ground ginger spice, but if you can’t find fresh ginger you may use the spice. I would start with 1/4 teaspoon and add more to taste as desired. It’s a very subtle ginger flavor that we want in this recipe (unless you LOVE ginger, then go for it! haha 😉 )
Mint. The mint leaves are just for garnish and are optional. I love the pop of green it gives the salad
The Sweet Chili Lime Dressing
This sweet chili lime dressing is super easy to make at home with just 5 ingredients.
Sweet chili sauce. Make sure the sweet chili sauce you buy is gluten-free. You’ll only need 2 tablespoons for this recipe, but it would be great to marinate some tofu for another meal later in the week!
Avocado oil. You may use another oil, I’m a big fan of avocado oil though, for its many health benefits. Avocado oil is rich in oleic acid, a very healthy fat also found in olive oil. It helps to reduce cholesterol and improve heart health, it’s high in lutein- great for the eyes! Avocado oil is high in vitamins A and E which is good for your skin, and it’s rich in antioxidants.
Lime juice. You only need 3 tablespoons of lime juice for this recipe. You can either squeeze fresh limes for the juice or you can buy lime juice NOT from concentrate. I like the Santa Cruz brand.
Agave or maple syrup. I used agave syrup in this recipe, but maple syrup is fine too. This recipe only calls for 1 tablespoon, so you may omit if desired.
Salt. Just a pinch to balance out the sweetness.

Ingredients
3 medium mangoes (I used honey mangoes but you can use any variety)
1 tablespoon olive oil
A quarter of a medium-sized red onion, sliced
2 mini cucumbers, sliced
1 ½ cups grape/cherry tomatoes, cut in half
1 teaspoon lime zest, about ½ lime
1 teaspoon grated ginger
Fresh mint for garnishing
Sweet Chili Lime Dressing
2 tablespoons gluten-free sweet chili sauce
¼ cup avocado oil
3 tablespoons lime juice
1 tablespoon agave/maple syrup
Pinch salt
Instructions
Make the sweet chili lime dressing first. Add all of the ingredients to a small bowl and whisk until well combined. Alternatively you can blend the dressing ingredients together. Set aside.
Slice the mangoes into slices, or you could also cube the mangoes. Slice the red onion, cucumber, and tomatoes and set aside.
Heat a griddle pan over medium heat. Add a tablespoon of olive oil and swirl around the pan. Place the mango slices in the griddle. Add 1 tablespoon of the chili lime dressing and evenly drizzle it over the mango slices. Grill the mango until they turn golden and crispy, flipping them so each side gets grilled.
Place the grilled mango slices into a large bowl and add the sliced red onion, cucumber, tomatoes and the dressing to the bowl. Zest half of a lime into the bowl. Peel the ginger piece and grate about 1 teaspoon into the bowl. Gently toss everything together to combine. Garnish with fresh mint upon serving if desired.
Notes
*Note: Alternatively you can grill the mango on an outdoor grill if you have one, but gently toss the mango slices in the chili lime dressing before placing on the grill.
