Popsicle Ingredients

Beets. Adding cooked beets in these popsicles is a great way to get more beets in your diet in a fun way! I like to purchase cooked, ready-to-eat beets for easy popsicle prep and less mess! No peeling, boiling, cooking. You will need 1 cup of cubed cooked beets.

Strawberries. You will need 2 cups of fresh strawberries for this recipe. I haven’t tried to make these popsicles with frozen strawberries but frozen strawberries will most likely work also (and might actually be easier, again cutting out some recipe prep work!)

Maple syrup. These popsicles are naturally sweetened with maple syrup! It makes these popsicles sweet, but not overly sweet.

Coconut milk. I have made these popsicles with full fat coconut milk and also lite coconut milk. Both work, but I will say if you’re looking for a creamier popsicle- go with the full fat, unsweetened coconut milk.

Chia seeds. Chia seeds add a fun texture to the strawberry beet jam, while also adding a little plant-based protein, fiber, and omega-3! You can use white chia seeds or black chia seeds (I used white chia seeds).

How to Make These Creamy Coconut Milk Jammy Popsicles

1. Make the strawberry beet jam

Wash and cut the strawberries into medium-sized pieces, removing the strawberry tops. Place the strawberries into a medium saucepan. Cut the cooked beets and add those to the saucepan along with the maple syrup.

    Heat the mixture over medium heat, stirring frequently, until the strawberries soften and break down. This will take about 15-20 minutes. Using an immersion blender, blend the mixture into a thick jam-like consistency.

    ๐Ÿ’ก If you don’t have an immersion blender you can pulse the mixture in a regular blender or smash really well with a fork.

    Then stir in the chia seeds.

    2. How to layer the jam into homemade popsicles

    Alternate placing a spoonful of the strawberry beet chia seed jam and coconut milk into the popsicle mold until each mold is full.

    Take a popsicle stick and lightly swirl the jam and coconut milk within each mold.

    3. Insert popsicle sticks and freeze

    Then insert the popsicle sticks and freeze for at least 2 hours, preferably overnight.

    Technically you can, however, I have not found a strawberry beet chia seed jam and making your own is quite simple and easy!

    Do I need popsicle molds?

    Popsicle molds work best, I used this one, but you can also use small paper cups with popsicle sticks as a DIY option!

    What does beet add to the flavor?

    Beet adds a subtle earthy sweetness and a deep pink color. If you’re not a beet lover, combining the beets with the strawberries is a great way to add more beets into your diet!

    Will kids like them?
