Once the summer heat kicks in, frozen treats become a daily must. My kids are obsessed with any kind of popsicle and we love making our own at home! These Grapefruit Chia Seed Popsicles are the ultimate summer cool-down! They’re a light, refreshing way to beat the heat while still giving your body something nourishing. Made with fresh-squeezed grapefruit juice, hydrating coconut water, a splash of maple syrup for sweetness, and chia seeds for a fun texture, these pops are as functional as they are flavorful.
They are naturally vegan & gluten-free and packed with electrolytes and vitamin C. These homemade popsicles are also free of refined sugar and a fun way to get in a little fiber and omegaa-3 thanks to the chia seeds. But the real showstopper? Their gorgeous orange-pink hue from nature! Adding pink pitaya (dragon fruit) powder gives these popsicles their gorgeous color—completely natural and totally Instagram-worthy. I also love adding a few real grapefruit slices inside the molds before freezing. They look beautiful and offer little bursts of tart citrus with each bite!
Popsicle Ingredients
Grapefruit. You will need approximately 2 large grapefruit to yield 1 cup of grapefruit juice. I suggest purchasing 3 or 4 grapefruit just in case your grapefruit aren’t super juicy.
Coconut water. Coconut water helps add to the volume of the popsicle liquid while also providing some electrolytes. Coconut water is also pretty clear so it allows the chia seeds and slices of grapefruit (if you choose to add them) to shine through.
Maple syrup. We’re keeping these popsicles naturally sweetened with maple syrup instead of refined sugar. The maple syrup adds just the right amount of sweetness to balance out the tartness of the grapefruit.
Pink pitaya (dragon fruit) powder. To enhance the gorgeous pink-orange color of these popsicles, I added 1/2 teaspoon of pink pitaya powder. This is optional, but pitaya powder also offers some really great benefits aside from boosting vibrance!
Chia seeds. I like to use white chia seeds in my popsicle recipes because of the look of them, but you may also use black chia seeds.
How To Make These Pink Grapefruit Chia Seed Popsicles
Slice the grapefruit in quarters and juice them into a glass measuring cup. Next, add the coconut water, maple syrup, and pityaya powder. Finally, add the chia seeds and whisk the mixture well to combine. Let the mixture sit on your counter for about 15-20 minutes, stirring frequently to avoid the chia seeds sinking to the bottom. The mixture will be ready to pour into the popsicle molds when the chia seeds start to absorb some of the liquid and “gel up” a bit and no longer all sink to the bottom.
Place your popsicle molds on a baking sheet (this helps with transferring them into the freezer and allowing them to lie flat), and add grapefruit slices in the popsicle mold if desired. I used this popsicle mold. Insert the popsicle sticks then pour the mixture evenly into your popsicle mold. Place the entire baking sheet into the freezer until firm, preferably overnight and enjoy! Keep them stored in the freezer in a sealed gallon bag or airtight container.
A Few Quick Tips
Soften the grapefruit. Roll the grapefruit on a hard surface to help it release more juice.
Try broiling the grapefruit for a sweeter, less tart grapefruit flavor! If you’re not a huge grapefruit fan, broiling grapefruit helps to naturally sweeten them! Simply line a baking sheet with foil, slice the grapefruit in half crosswise and place them flesh side up and broil for 5-8 minutes, watching them very carefully to make sure they don’t burn. You can slice a small section off the bottom of the grapefruit so they sit flat on the baking sheet. This caramelizes the sugar in the grapefruit enhancing its natural sweetness. Allow the grapefruit to cool before slicing and/or juicing.
Stir the chia seeds into the liquid well before pouring to avoid clumping. Let the mixture sit for 15-20 minutes before filling your molds so the chia seeds begin to gel.
Storage. Keep them stored in the freezer in a sealed gallon bag or airtight container.
