If you’re looking for a flavorful dressing or sauce for your Asian-inspired noodle dishes, salads, or as a dip for veggie spring rolls this Peanut Butter Ginger Lime Dressing is sure to check the box! This gluten-free, vegan condiment is made with 6 simple ingredients in just 5 minutes.
Originally, this Peanut Butter Ginger Lime Dressing was created to use in my Edamame Quinoa Salad, but it’s so delicious I wanted to let it shine and give this dressing it’s own dedicated recipe post! This recipe would also be great to use as a dip for spring rolls! Let’s dive in…
Soy sauce. The base of this Asian-inspired dressing is soy sauce. This dressing recipe calls for 1/4 cup of gluten-free soy sauce (Tamari) or you can use Liquid Aminos.
Sesame oil. You will need 2 tablespoons of sesame oil.
Ginger. I purchased frozen ginger cubes for ease to use in this recipe. If you use fresh ginger, it would be equivalent to 1 teaspoon of ginger.
Lime juice. You need 2 tablespoons of lime juice. You may used fresh squeezed lime juice or you can use bottled lime juice (what I used), preferably NOT from concentrate.
Agave syrup. If you don’t want to use agave syrup you can use maple syrup instead. The recipe calls for 2 tablespoons of a natural sweetener.
Peanut butter. Creamy or chunky peanut butter is fine to use in this dressing recipe, however, try to buy natural peanut butter that doesn’t contain any sugar or palm oil. You will need 1/2 cup of peanut butter.
This Peanut Butter Ginger Lime Dressing is so easy to whip up! Simply combine all of the dressing ingredients together in a food processor or blender and blend until smooth. Alternatively you can whisk the ingredients together in a bowl, but if you’re using a ginger cube I would suggest blending it. You can use a bullet blender or even an immersion blender will work.
Add water to thin to your desired consistency. This dressing/sauce is on the thicker side. I prefer thicker dressings and sauces, but if you would like to add water to thin to your liking, feel free to do so. I would add little bits at a time until you reach your desired consistency.
Swap the peanut butter for another nut/seed butter. The flavor profile will be different, but if you can’t have peanuts you can use cashew butter, almond butter, or even sunflower seed butter for an allergy-friendly version of this dressing.
Here are a few different recipes I think would be tasty if you swap out the listed dressing/sauce and use this Peanut Ginger Lime Dressing as a salad dressing or as a sauce instead.
This nutritious Edamame Quinoa Salad with Peanut Ginger Lime Dressing is a flavorful, hearty salad that is easy to make and can be enjoyed as a side dish or main dish. The quinoa and edamame are tossed with shredded carrots and red cabbage, a homemade peanut ginger lime dressing, and topped with agave lime roasted cashews. This gluten-free, vegan salad is a great source of plant-based protein and dietary fiber perfect for a nourishing lunch, a filling dinner, or as a side at your next cookout summer potluck!
A healthy plant-based meal made with gluten-free rice paper wrappers, japchae noodles, sesame kale, and a cabbage carrot mixture (coleslaw mix). Serve these Sesame Kale Spring Rolls for lunch or dinner with homemade sweet and sour sauce or soy sauce.
This Thai Peanut Glass Noodle Salad is a Thai-inspired noodle dish that’s made with gluten-free glass noodles, coleslaw cabbage and carrot mix, sweet juicy mango, crunchy cucumber, fresh cilantro and zingy ginger tossed in a mild peanut sauce, topped with crushed crunchy peanuts and finished off with freshly squeezed zesty lime juice!
A delicious Thai Chopped Salad using green and purple cabbage, kale, broccoli, carrots, green onion, cilantro, mandarine oranges, and sliced almonds tossed in a simple almond butter dressing for a fresh and crispy plant-based meal!
If you have an abundance of cucumbers from your summer garden, this Miso Cucumber Salad is the perfect, most delicious way to enjoy them! Sliced cucumbers tossed with shallot, cilantro, and roasted peanuts dressed in a homemade miso ginger orange dressing.
