Nothing beats sipping on some zesty lemonade in the hot summer sun ☀️. And then I’m taking it up a notch and adding some pink pitaya powder and chia seeds to give this lemonade a pretty pink superfood boost! 💁🏻♀️
What is Pitaya?
Pitaya is another name for the tropical fruit known as dragon fruit. Pitaya is very recognizable for its appearance of bright pink skin and white and black seeded flesh.
Pitaya Taste & Nutrition
While I don’t find that dragon fruit has much of a flavor, it is boasting with vitamins and minerals and is a great addition to your diet.

Pitaya Lemonade Ingredients
Lemons. This lemonade recipe uses freshly squeezed lemons. I bought a bag of large lemons from the supermarket. You will need 1 and 1/2 cups of lemon juice, which equals approximately 6-8 large lemons.

Maple syrup. Most lemonade recipes use cane sugar dissolved in boiling water. For this lemonade recipe I’m using pure maple syrup instead of refined sugars to keep it naturally sweetened and also cut out a step in recipe prep because there’s no need to boil the water.
Water. You will need 4 cups of cold, preferably filtered water to combine with the lemon juice and maple syrup. This adds volume to the lemonade and also dilutes the lemon juice so it’s not overly tart or sour.
Pink pitaya powder. Sometimes dragon fruit, especially pink dragon fruit (pitaya), is hard to find in local grocery stores, so to make this recipe a breeze and available to more people, I’m using pink pitaya powder! By using dried pitaya powder you don’t have to go on a mad hunt for dragon fruit AND you can make this delicious pitaya lemonade whenever you want, again and again! Plus there’s no slicing, chopping, scooping, etc. which makes this a super quick homemade lemonade recipe.
💡 Pink pitaya powder is also one of my favorite ways to naturally color your recipes pink! The powder is concentrated so it adds a nice vibrant color to your dishes and it’s flavorless so it doesn’t alter the taste of your recipes.
Chia seeds. Remember when the internal shower lemon water beverage was trending? Haha Well all joking aside, it became so popular because of the benefits chia seeds can bring to your diet. I adore chia seeds! From chia pudding, to chia seed popsicles, a chia breakfast tart, and sprinkling them on top of my smoothie bowls, I’m always trying to incorporate them into my recipes.
Ice. Ice is used for serving of desired. I like my lemonade ice cold, and suggest serving this pink pitaya chia seed lemonade with ice.
How To Make Chia Seed Lemonade
Blender Method
Cut the lemons and squeeze them into a large measuring cup. Strain the lemon juice into a blender container using a fine mesh strainer to remove any excess pulp or seeds. Add the maple syrup, cold water, pink pitaya powder and chia seeds to the lemon juice. Blend on low for about 20 seconds. Let the lemonade rest for a couple of minutes and then blend again.
Repeat this process over the course of 10-15 minutes, until the chia seeds start to absorb some of the liquid and aren’t all floating on the top of the lemonade. Add ice to each glass and pour the lemonade over the ice. Store any leftover lemonade in the refrigerator and give it a good stir before serving again.
Pitcher Method
If you wish to make this lemonade without a blender, strain the lemon juice into a large pitcher using a fine mesh strainer to remove any excess pulp or seeds. Add the maple syrup, cold water, pink pitaya powder and chia seeds to the lemon juice and then stir the lemonade every couple of minutes over the course of 10-15 minutes until the chia seeds start to absorb some of the liquid and aren’t floating on the top of the lemonade.

Light & refreshing. This lemonade recipe is nice and light with the freshly squeezed lemon juice diluted just perfectly with water to keep it tasting like lemonade but making it light and refreshing.
Naturally sweetened. This lemonade recipe is made without granulated or cane sugar and is sweetened with pure maple syrup, which allows this recipe to be sweet but not so sweet that it leaves you thirsty after you enjoy it. You know what I mean? 😜
Easy to make. Other than squeezing the lemons, which takes hardly any time at all, this recipe is so quick and simple to make. I’m excited to try other flavors and keep fresh squeezed lemonade in my fridge all summer long!
