Ingredients You’ll Need
For the Chocolate Chia Pudding
Chia seeds. You can use black or white chia seeds for this recipe. You will need 1/4 cup of chia seeds.
Cacao powder. I like to use a quality, unsweetened, rich and flavorful raw cacao powder such as this one. You may also use cocoa powder, just make sure it is unsweetened to keep the sugar content down in this recipe.
Plant milk. I used an unsweetened oat milk for the chia pudding, but most unsweetened plant-based milks will work.
Maple syrup. Due to the cacao powder being unsweetened, it may be a bit bitter if you don’t sweeten it just a little bit, so I chose to use maple syrup for a natural sweetener. You may also use date syrup or agave syrup if you prefer.
Vanilla. For the best flavor and to keep this recipe gluten-free, use a pure vanilla extract and not imitation vanilla.
Salt. Just a pinch of salt to bring out the flavors and sweetness.
For Marshmallow & Graham Cracker Layers
For the marshmallow layer I used a store-bought vegan marshmallow cream and it worked perfectly! It even toasted with my kitchen torch to create the perfect campfire finishing touch on these s’mores pudding cups!
And then of course you have to have graham crackers to complete all the flavors of the beloved s’mores. There are a few different gluten-free, vegan graham crackers out there, I used this brand. I blended the graham crackers in my food processor to create the homemade graham cracker crumbs. You can also just crush them with your hands.
Dairy-Free Chocolate Ganache
Chocolate chips. Because I am using store-bought marshmallow cream and graham crackers and they do contain cane sugar, I opted to use dairy-free, coconut sugar sweetened chocolate chips.
Plant milk. I used an unsweetened oat milk to melt with the chocolate chips to create a creamy, vegan chocolate ganache.
How to Make Chocolate S’mores Chia Pudding
1. Make the Chia Pudding
In a mixing bowl or jar, whisk together the chia seeds, oat milk, maple syrup, cacao powder, vanilla, and a pinch of salt. Stir well to fully incorporate the cacao powder.
Let it sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 3 hours or overnight until thickened.
2. Make the Ganache
In a small saucepan or microwave-safe bowl, heat the milk until it starts to bubble. Pour the milk over the chocolate chips and whisk/stir until smooth and glossy. Let it cool before layering. The ganache will thicken as it cools.
3. Assemble the S’mores Cups
In small jars or glasses, layer the chia pudding, a thin layer of chocolate ganache, graham cracker crumbs, and marshmallow fluff. Repeat the layers as desired, ending with chocolate ganache and then place it in the fridge to set up for about 20-30 minutes. Finally, top with a dollop of marshmallow fluff, drizzled ganache and graham cracker crumbs. You can even lightly toast the marshmallow cream with a kitchen torch for that campfire feel!
Tips
Pipe the marshmallow cream. I added the marshmallow cream to a piping bag and piped it into the jars. I found this to be easier than spooning it in the jars because the fluff is very sticky!
Texture matters. If you prefer a smoother pudding consistency, you can blend the chia pudding before chilling it.
Make it ahead. The chocolate chia pudding can be prepped 2-3 days in advance, and the whole jars can be put together a day in advance. Keep them chilled in the refrigerator.
No marshmallow fluff? Try whipped coconut cream or a dollop of vanilla coconut yogurt as an alternative to this marshmallow chia pudding, although I encourage you to try this vegan marshmallow cream, it’s so good! 😋
