Crack… Bang… Boom! Happy Independence Day all my American peeps! Talk about firecrackers, these parfaits were for sure a party in my mouth! Now I know, nice cream has been done over and over, and if you’ve made it you understand why (because it’s so darn easy to make and is so freakin’ delicious). And if y’all haven’t made nice cream- well guurrlll, you’ve been missing out! But hey! You’re here now so let’s do this!
What is nice cream anyway? And no- it’s not a typo, haha. Basically, it’s frozen bananas + another frozen fruit (if you want) + vanilla extract + a splash of almond milk. Sometimes I add protein powder to mine too! That’s it! Genius, right? It’s a healthy alternative to ice cream, but the amazing part about nice cream is that you can have it for breakfast too! Score!

So what makes this nice cream better than others you ask?! Perfect question my friend. Well I’ve teamed up with Suncore Foods to bring you this crackilackin’ Triple Berry Chia Pudding Nice Cream Parfait! The really fun thing about my nice cream recipes lately is adding a super colorful superfood powder to give it a gorgeous color all-the-while boosting the nutritional value. For the blue layer in this parfait I used Blue Butterfly Pea Superjuice Powder and doesn’t it just make the most stunning blue hue?!
The next question you might have is, ‘What the heck is chia pudding?!’ Another great question. So I make mine with quality chia seeds, like these from Suncore Foods + maple syrup + vanilla extract + almond milk + a pinch of salt. Again- super simple. You stir everything together and store in your fridge overnight and taa-daa! Ready made pudding the next morning. Chia pudding is also great with fresh fruit and granola, nuts, coconut, etc… but I decided to add a layer of my favorite chia pudding in this Triple Berry Chia Pudding Nice Cream Parfait.
