When I think of Mother’s Day, I think of two things. Pancakes and flowers, ok well and of course my mom- but that’s a given. When I was growing up, making my mom pancakes on Mother’s Day was just my way of showing my mom that I loved her. Maybe to give her a break in the kitchen, or maybe my love language is pancakes lol. So naturally now, it makes so much sense for me to want to make pancakes on Mother’s Day with my son (and share them with all of you so that you can go and make your mamma some!). Simple and delicious for this #SimplyMothersDay.
This is only my second Mother’s Day as a mommy myself, and you better bet we are going to be having this beautiful brunch spread! And what’s a brunch without juice?! Juice is a necessity to any brunch spread, but sometimes I am leary to buy juice because of most juices are made from concentrate (which can contain added sugars like high-fructose corn syrup or other high-calorie additives, preservatives, colors or artificial flavors). Simply Juice is great because it’s not from concentrate, 100% juice, never sweetened or concentrated and never frozen. In fact, the oranges that go into each carafe of Simply Orange are all carefully selected at the peak of ripeness and the majority are still picked by hand. Pretty great right?!
Since my little guy is eating big kid food now, I thought it would be so fun for us to make silver dollar pancakes together! Maybe someday he will make these for me and bring them to me in bed 🙂 But for now, I will enjoy whipping up these little gems together. The other great thing about these pancakes is I replaced the water or milk with orange juice! So you get a delicious citrus flavor in the pancakes too! But don’t forget to put extra love in them!

Ingredients

1 cup Simply Orange Juice

1 banana
-
1/2 cup oats

1/2 cup gluten-free all purpose flour

1 tsp baking powder

1/2 tbsp unsweetened cocoa powder

pinch salt
-
1 tbsp maple syrup
Optional
-
fresh orange slices
-
chocolate chips
-
maple syrup
Instructions
- Place all ingredients in your blender/food processor and blend until smooth
- Heat a large skillet over low heat, spray with non-stick coconut oil spray and pour 1 tbsp of batter per pancake (I make 4-silver dollar sized pancakes per batch). Cook a couple minutes per side
- Serve with fresh oranges, Simply Orange juice, chocolate chips, drizzled maple syrup
