This French Toast in a Mug is the perfect quick and easy breakfast on the go. Combine gluten-free bread with oat milk, chia seeds, cinnamon, vanilla, coconut sugar, nutmeg and vegan butter and microwave for 1-2 minutes. Top with pure maple syrup and enjoy! This is a great french toast recipe to use up old bread or the ends of the loaves to cut down on food waste!
So, I’ll start this post off by saying… is this french toast recipe going to be the absolute best french toast you’ve ever had? No. BUT, when you’re craving french toast fast, and you don’t have time during the week to make the real deal, this French Toast in a Mug is a great way to satisfy your craving. And don’t get me wrong, it’s still delicious!
This French Toast in a Mug is also a fabulous way to use up stale bread, or the ends of the loaves that most people don’t want, but feel bad throwing away 😉 That’s me. Other than giving pieces to my dogs, we rarely use the butts of the loaf. Until now! It wasn’t until I was assigned to create an article for Simply Gluten-Free & More Magazine using “stale” bread that I had this fun idea to use the stale bread, or leftover butts, to make french toast in a mug. What a fun, easy breakfast recipe!
First you’ll start by cubing the bread like this:
Then add 1 tablespoon of vegan butter to the bottom of a mug and microwave it for 20 seconds. Spread the butter around the bottom and up the sides, then add the bread chunks to the mug.
The bread will cook down when you microwave it, so you want the mug to be slightly overflowing like this:
Next, add 1/4 cup of oat milk, 1 teaspoon pure vanilla extract, 1/2 teaspoon of cinnamon, 1/8 teaspoon nutmeg, 1 tablespoon coconut sugar (or other sugar of choice), a pinch of salt and 1 heaping teaspoon chia seeds to a small bowl and whisk to combine. Let the mixture sit for 5-10 minutes, stirring frequently. This mixture will replace an egg, and the chia seeds will slightly gel up a little bit (while also providing an added health boost!).
Pour the mixture over top of the bread cubes in the mug.
Add an additional tablespoon of oat milk over top and microwave for 1-2 minutes.
You basically want to make sure the bread is soft but not overcooked, so start with 1 minute and then 30 second increments after that.
Remove the mug from the microwave and melt an additional tablespoon of butter, 1/4 teaspoon of cinnamon and a pinch of nutmeg in a small bowl. Pour that over top of the cooked french toast in a mug and let it sit for a few minutes, then pour pure maple syrup over top and enjoy!
