A creamy, delicious frozen treat made with frozen bananas, beet powder, oat milk, plant protein powder, maple syrup and vanilla topped with with sprinkles, chocolate and cookie dough bites!

Where in the world did summer go? I don’t know if time is speeding up and we just don’t realize it or if my life is just that chaotic right now. If you’re a fellow parent, you probably feel me. Phew. Let’s take a minute to just breathe……… (gets interrupted by child screaming for a snack, haha)
School is back in session (yay!) and this is a first for me, my two-and-a-half year old started preschool! No, I didn’t cry, and neither did he- I think we were both looking forward to him being busy and active all morning (and me not having to try to entertain him all day with a 6 month old). Now I know things will probably change when he goes off to college and I’m balling my eyes out lol! I personally find that preschool has allowed me to really appreciate my time with him more- I guess it’s true what they say, distance makes the heart grow fonder, right?
But no need to keep your distance from this sweet treat! Although it looks like it might be something you’re trying to avoid, I assure you this dessert is loaded with nutrients, really! And it makes the perfect after school snack that says “Hi, I missed you and I want to spoil you for working so hard (and hopefully behaving) at school today” while also sneaking some highly nutritious foods into their diet.
These Beet Banana Nice Cream Sundaes are naturally sweetened with frozen banana and maple syrup (optional)! The cookie dough is also naturally sweetened and made with chickpeas for some added protein (love me some hidden plant protein). Beet root powder not only adds the gorgeous pink color, but supplies many nutrients to aid in anemia and fatigue, lowering blood pressure, a healthy heart, and stronger bones. And I like to add half a scoop of protein powder to my nice cream to give it a better texture, but also add some plant protein to my dessert. Pretty crazy, huh?! And don’t be fooled, adults and kids alike will love these easy-to-make Sundaes.
My favorite Beet powder is from Love Beets. It’s made from 100% US beets, has 0g added sugar, and is non-GMO, gluten-free, dairy free and vegan. Beet powder delivers the nutritional benefits and color of beets without any of the peeling, cooking or juicing– making it the perfect way to get an extra boost of nutrients in a pinch! And Since frozen banana is the main ingredient, be sure to take all those over-ripened bananas, peel, and freeze them ahead of time. We like to always have a stash in the freezer for when the mood hits.
The cookie dough bites are optional, but I highly encourage you to try this 7-Ingredient, 10-minute Chocolate Chip Cookie Dough recipe. Roll into little cookie dough balls and add right on top of your Banana Beet Nice Cream along with your sprinkles (preferably naturally colored, vegan and gluten-free), strawberries, and chocolate (cones optional).
Although we might be celebrating these kids going back to school, let’s also celebrate with them by offering healthier, dye-free, less processed sweet treats (which may or may not also work well as a bargaining chip… just saying lol!).
