Ok, ok… a bunny themed post in the month of April… pretty cliche, but just look at how cute these bunny ice cream cones are! And here’s the thing, with Easter being nearly as bad as all the other holidays when it comes to overindulging on candy and sweets, these are a healthier option you and your kids will love- maybe even become an Easter/Spring time tradition!
I know I have said this before, but if you haven’t been introduced to nice cream, let me do the honors. No, nice cream isn’t a typo, that’s really what it’s called! Nice Cream is fruit-based ice cream that has taken the health food world by storm. You simply blend frozen fruit and add minimal other ingredients, including frozen banana which makes for the creamiest treat. It’s pretty epic (and did I mention healthy?!)
I had a few wishes when I thought up this nice cream: 1- That it was a super healthy, naturally sweetened treat that would almost trick your brain into thinking it wasn’t. 2- They would come together lickety-split, proving to be a simple and satisfying treat to share with your family and friends , and 3- You could make them with minimal ingredients. You see, I have a toddler and they have the attention span of a knat- well at least mine does, haha. So we needed our edible creative craft to be from bunny-to-belly ASAP.
Crunch Pak to the rescue! I used their pre-sliced, peeled apples in this recipe to get right to blendng and skip the whole peeling and slicing step. I simply threw my Crunch Pak apples in the freezer overnight so they were ready to use the next day in this Apple Pomegranate Nice Cream recipe.
To make these into bunny cones, cover two banana slices with dairy-free white chocolate and sprinkles, attach them together and then place a jelly bean in the center for the nose, and use almond slices for the teeth. Use a vegan marshmallow, and vegan chocolate chips for the eyes, and Crunch Pak apple slices with white chocolate and sprinkles for the ears.

☆ frozen Crunch Pak apple slices
☆ frozen bananas
☆ pomegranate juice
☆ pure vanilla extract
That’s it! Isn’t it amazing?! Make sure you freeze your fruit the night before so it’s ready to blend the next day. Somebunny is going to love you for sharing this recipe with them… ok, ok I am done.
This nice cream is also a perfect treat any time, even if you’re not making them into bunnies. I sure plan to keep some Crunch Pak apple slices frozen so I can blend this up in no time this summer!
