These Vegan Peanut Butter Buckeyes are just like the traditional buckeyes made vegan. They are soft, creamy, and maple-sweetened with no powdered sugar. A classic, no-bake Ohio candy made dairy-free, gluten-free, and refined sugar-free!
This recipe is my take on traditional buckeyes using peanut butter powder and maple syrup instead of powdered sugar. They are a naturally sweetened take on the native Ohio favorite—soft, creamy, and dipped in rich chocolate just like the traditional version, but without powdered sugar. 🥜🌰🍫
Not only do I think it’s fitting to have a buckeye candy recipe on the Healthy Little Vittles blog because I’m from, and live in Ohio, but also because they’ve become such a popular sweet treat over the years!
By using pure maple syrup for sweetness and vegan butter for structure, these buckeyes deliver that familiar melt-in-your-mouth texture while keeping the ingredient list simple and approachable. They’re no-bake, easy to make, and perfect for holidays, gifting, or anytime a nostalgic chocolate-peanut-butter craving hits.

History of Buckeyes
Buckeyes are named after the buckeye nut from the Ohio buckeye tree, which is the official state tree of Ohio. The candy was created to resemble the nut’s appearance— hence the signature look where the peanut butter center is left partially exposed above the chocolate.
Over time, buckeyes became especially popular during football season, often served at parties and tailgates as an edible symbol of Ohio pride.

Ingredients
Peanut butter powder. Using peanut butter powder provides all the classic peanut butter flavor without added oils, sugars, or other ingredients. When rehydrated with vegan butter and maple syrup, creates a smooth, creamy filling that mimics traditional buckeyes.
Pure maple syrup. Naturally sweetens the filling while keeping it soft and glossy, replacing powdered sugar without any grit.
Vegan butter. Adds the necessary fat and structure so the buckeyes firm up when chilled while staying soft and fudgy inside. I used Miyoko’s vegan butter.
Oat milk. Used to gently rehydrate the peanut butter powder and help create a smooth, creamy consistency.
Vanilla extract. Enhances the sweetness and rounds out the peanut butter flavor for a more classic candy taste.
Salt. Balances the sweetness and brings out the rich peanut butter and chocolate flavors.
Dairy-free chocolate chips or chopped dark chocolate. Creates the signature buckeye coating with a rich, slightly snappy chocolate shell. For a completely refined sugar-free recipe, be sure to use chocolate without added sugar, or dark chocolate.
Coconut oil. Helps the chocolate melt smoothly and set with a glossy finish.
Why Using Peanut Butter Powder Works
- Peanut butter powder supplies peanut flavor without excess oil.
- Vegan butter replaces the fat missing from powdered peanut butter.
- Maple syrup naturally sweetens the buckeyes and keeps the filling smooth. No powdered sugar needed!

How To Make Peanut Butter Buckeyes Without Powdered Sugar
In a medium bowl, whisk together the peanut butter powder, salt, maple syrup, melted vegan butter, vanilla, and 3 tablespoons oat milk. Mix until smooth and thick. Adjust consistency Add additional oat milk 1 tablespoon at a time until the mixture resembles soft peanut butter fudge. It should be creamy and pliable, not sticky or runny.
Refrigerate the mixture for at least 1 hour, until firm enough to roll without being too sticky.
Scoop about 1/2 tablespoon of the mixture and gently roll into balls. Place on a parchment-lined baking sheet. Place them back into the fridge for 30 minutes.
💡 To make the peanut butter balls smoother, re-roll them when they are very chilled.
Melt the chocolate and coconut oil together until smooth. Insert a toothpick into the center of each buckeye.

Gently dip each one about ¾ of the way into the chocolate, leaving the top exposed.

Set Refrigerate for 15–20 minutes, until the chocolate is set. You can smooth out the top where the toothpicks were if desired.

Storage
Store refrigerated up to 7 days or freeze up to 2 months.
Recipe Tips
- Use plain PB powder (no sweeteners if possible).
- Do not replace butter with only liquid—fat is essential for these buckeyes to have the perfect texture.
- Avoid flours or starches; they ruin the traditional texture.

Troubleshooting
- Too dry or crumbly? Add an additional 1 tablespoon melted vegan butter.
- Too soft? Chill longer or add an additional 1–2 tablespoons PB powder.
- Chalky texture? Not enough fat—an additional 1 tablespoon melted vegan butter. Don’t add more liquid!
