I’ve been roasting pumpkin seeds for as long as I can remember. I always loved them so much, and now I got my kids hooked on this crunchy Fall snack! So naturally after we visited the pumpkin farm and my kids carved their little pumpkins, they asked me to make my Everything Bagel Roasted Pumpkin Seeds 🎃.

Ingredients

Fresh pumpkin seeds (scooped from your pumpkin). We were able to get 2 ½ cups of seeds from your carved pumpkins. These are the unshelled pumpkin seeds, not the little green pumpkin seeds inside the shell. We’re going to roast the whole seeds! 🤗

Vegan butter. You’ll need 2 tablespoons of melted vegan butter to help the seasoning adhere to the seeds but also to help make the seeds nice a crispy.

Everything bagel seasoning. I used this everything bagel seasoning, which is a combination of organic sesame seed, organic garlic, sea salt, organic toasted onion, organic black sesame seed, organic poppy seed.

Salt. Your everything bagel seasoning should have salt in it, but if you prefer a saltier snack, you can add a sprinkle of salt to taste (optional).

How to Make Everything Bagel Roasted Pumpkin Seeds

Scoop & Clean the Seeds.

As you carve your pumpkin, set the seeds aside in a bowl. Rinse them well under cold water, removing as much pumpkin pulp as possible. (A little stringy pumpkin left on the seeds is fine!)

Dry Them Well.

Spread the seeds out to dry on a baking sheet lined with paper towels. I let mine dry overnight. The drier they are, the crispier they’ll get in the oven.

Season.

In a bowl, toss the seeds with melted vegan butter and everything bagel seasoning (and any additional salt). Give them a good mix to make sure every seed gets that savory coating.

Roast Until Golden.

Spread the seeds in a single layer on a parchment-lined baking sheet. Roast at 400°F for about 12-14 minutes, tossing halfway through. They should be lightly golden and crispy.

Cool & Snack.

Let the seeds cool on the pan—this helps them crisp up even more. Then snack away!

Boiling trick. For extra crispiness, you can boil the seeds for 10 minutes before roasting, then dry and season. I skipped this step, but if your seeds don’t look the greatest, you can try this technique.
