I love the chocolate pretzel combination. While I have these Pretzel Pumpkin Seed Date Chocolate Clusters and a fun Halloween Pretzel Board, I thought the Healthy Little Vittles blog could use another fun pretzel snack, this time with gooey, buttery caramel stuffed in between two gluten-free pretzels and then dipped in rich and decadent melted chocolate. OH MY HEAVENS these are so good, I bet you can’t just eat one! 😉

Ingredients
Pretzels. I used these gluten-free square pretzels. You don’t have to use the square shape, you can use whatever shape you’d like or even classic pretzel twists. You’ll need 60 pretzels to make 30 Caramel Stuffed Chocolate Dipped Pretzel bites, so keep that in mind. You may want to purchase 2 bags of pretzels in case some of them are broken.
Caramel. There are a couple different brands of vegan, non-dairy caramels that I have seen, I purchased these vegan caramels and they worked perfectly in this fun sweet snack!
Chocolate. You’ll need 1/2 cup of dairy-free chocolate chips to dip one side of the pretzel bites into.
Coconut oil. Adding 1/2 teaspoon of coconut oil to the melted chocolate helps the chocolate have a more dip-friendly consistency and also helps the chocolate not to crack when you bite into these bites.
Cacao nibs. I used organic cacao nibs to garnish these fun stuffed pretzels not only for added texture but also for a superfood boost!

What Are Cacao Nibs?
Cacao nibs are harvested, dried, and fermented pieces of raw cacao or cocoa beans, the same beans used to make chocolate candy. These crunchy little bits have a slightly bitter chocolate flavor and can be enjoyed raw or roasted. Cacao nibs are praised for their many health benefits. They can be enjoyed in many ways, a baking replacement for chocolate chips, added to oatmeal, yogurt, cereal, smoothies and smoothie bowls, or eaten on their own as a crunchy snack!
How To Make Caramel Stuffed Chocolate Dipped Pretzels
Preheat the oven to 250 degrees Fahrenheit. Line a baking sheet with parchment paper and place the pretzels in a single layer spaced about 1/2 inch to 1 inch apart.
Top each pretzel with an unwrapped caramel candy and bake the pretzels for 8-10 minutes. You want the caramel to be soft but not completely melted.

Remove from the oven, and working relatively quickly, add another pretzel on top of the caramel and gently press down until the caramel spreads and reaches the edges. You don’t want to press too hard and break the pretzels. Repeat for all of the pretzels and allow them to cool. As they cool, the top pretzel should set.

Melt the chocolate chips and coconut oil in a small bowl. You can microwave or use the double broiler method. Dip one end of each pretzel sandwich into the melted chocolate. Let the excess chocolate run off and then place it back onto the baking sheet.

Sprinkle with cacao nibs and then repeat the dipping and sprinkling process for all of the other pretzels.

Place the baking sheet into the refrigerator and allow the chocolate to set up and then enjoy! Keep them stored in an airtight container on the counter.
Helpful Recipe Tips & FAQ’s
Work in batches of 15 pretzels at a time. Once the caramel comes out of the oven it starts to re-harden and set up. In order for you to be able to successfully make little pretzel caramel sandwiches, you’ll need to work a little bit quickly. I found that making half of the Caramel Stuffed Chocolate Dipped Pretzels works best and then making the other half while they cool, before dipping in chocolate.
Smear any caramel that oozes out of the sides around the perimeter of the pretzel. This makes a cleaner pretzel bite, while also helping the top pretzel to adhere to the lower pretzel better. I just used my finger to do so, but you can also use a butter knife or spoon.
Gently press the top pretzel down and move it side to side to help the caramel spread to all sides of the lower pretzel.

Do I have to use square pretzels?
No. I know of one brand that makes different shaped gluten-free pretzels. If you can’t find them, or prefer to use the standard pretzel twists you may, however, I personally feel that the square shape looks super cute.
Do the cacao nibs make this snack bitter?
No, actually! I found the cacao nibs enhanced the chocolaty flavor and added another nice crunch alongside the pretzels.
Can I make my own caramel?
Originally I wanted to use my date caramel in this recipe, however, I found that it really wasn’t the right caramel texture I was going for in these Caramel Stuffed Chocolate Dipped Pretzels. I have not tried to make this recipe with another type of caramel other than these vegan caramel candies.
