Description
These Gluten-Free Vegan Sushi Sandwich Rolls are filled with avocado, cucumber, carrots, vegan cream cheese and nori for a fun, easy lunch!
Ingredients

- 1 loaf of large/wide slice gluten-free bread (I used Little Northern Bakehouse Whole Grain Wide Slice Bread)
- vegan cream cheese
- 2 nori sheets
- 1 avocado
- 1 cucumber, peeled
- shredded carrots
- everything bagel spice for garnishing
Instructions
- Start by slicing the crusts from the bread. Working with one slice at a time, microwave the bread for about 12–15 seconds. Warming the bread slightly softens it and makes it more pliable. Immediately use a rolling pin to gently flatten the bread, paying extra attention to the edges. Now you’re ready to fill!
- Spread a thin layer of vegan cream cheese over the bread, followed by a piece of nori cut to fit the slice. Spread a thin layer of mashed avocado over the nori.
- Place a thin strip of cucumber and a small amount of shredded carrots toward the lower third of the bread.
- Starting at the bottom, gently but firmly roll the sandwich up. Place it seam-side down while you assemble the remaining rolls.
- Once they’ve had a chance to sit, slice each roll into sushi-sized pieces and sprinkle with everything bagel seasoning.
