Description

This Vegan Bratwurst Sauerkraut Pasta is a German-inspired pasta dish made with less than 10 ingredients and is ready in just 30 minutes! Plant-based bratwurst sausage, caramelized red onions, garlic, and sauerkraut get tossed in with buttery gluten-free noodles for a quick & flavorful comforting meal.

Instructions

  1. Boil a large pot of water. Slice the plant-based bratwurst into half-moons or rounds. In a large skillet over medium heat, add the olive oil and cook the bratwurst until browned and slightly crispy on the edges. Add the red onion and sauté until soft and lightly caramelized, about 5–7 minutes. Stir in the garlic and cook for another 1–2 minutes until fragrant.
  2. Add the sauerkraut (drained) and cook for a few minutes to warm through.
  3. Cook the pasta according to package directions, strain it, and add it back to the pot with the vegan butter.
  4. Add the sauerkraut and bratwurst mixture to the pan with the cooked pasta.
  5. Season with salt and black pepper to taste. Serve warm, garnish with chopped parsley and enjoy!
