This creamy Strawberry Cheesecake Smoothie is made with cashews and dairy-free yogurt for the perfect rich, tangy cheesecake flavor. - 1 cup frozen strawberries
- 1/4 cup raw cashews, soaked
- 1/2 cup dairy-free yogurt
- 1/2 cup unsweetened plant milk (oat milk, cashew, or soy milk)
- 1-2 tablespoons maple syrup
- 1 tablespoons pure lemon juice
- 1 teaspoon pure vanilla extract
- Pinch of salt
Optional Toppings (for extra cheesecake vibes):
- gluten-free graham crackers, crumbled
Instructions
- Soak the cashews until soft, then drain. You can do this by either soaking them in water for 20-30 minutes, hot water 10-25 minutes, or soak them in water and keep in the fridge overnight for quicker prep in the morning.
- Add all ingredients to a high-speed blender, starting with the milk and yogurt, and blend until completely smooth and creamy.
- If you like the pink and white swirl effect, take your empty glass and spread yogurt up the sides of the glass, leaving some empty space for the pink smoothie to show through (refer to the blog post for a photo of how to do this).
- Then pour the strawberry smoothie into a glass, sprinkle gluten-free graham cracker crumbs on top, if desired, and enjoy immediately.
