Description
This thick and creamy homemade Roasted Cherry Tomato Hummus is the perfect snack or appetizer made with fresh cherry tomatoes that are roasted in the oven and then blended with garbanzo beans, tahini, olive oil, garlic, lemon juice, and salt. Serve with crackers, chips, pretzels, or fresh cut veggies!
Ingredients
- 5 cups cherry tomatoes
- 1 can (15 oz) garbanzo beans, drained
- 3/4 cup tahini
- 1 teaspoon minced garlic
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 teaspoons salt, divided
- chopped basil, optional for garnish
Instructions
Preheat the oven to 475 degrees F.
Wash the tomatoes and place them onto a baking sheet. Sprinkle with 1 teaspoon of salt and roast in the oven for 20 minutes, until they burst and start to turn brown and wrinkly.
Meanwhile, drain the chickpeas and add them to a food processor/blender along with the tahini, garlic, olive oil, lemon juice, and remaining teaspoon of salt.
Allow the tomatoes to cool slightly and then add them to the food processor with the rest of the ingredients. NOTE: Reserve some roasted cherry tomatoes for garnishing the hummus if desired.
Blend until smooth.
TIP: add 3-5 ice cubes to help the hummus move along and have an extra smooth and creamy texture!
Garnish with chopped basil, if desired. Serve with crackers, chips, pretzels, or fresh veggies! Keep leftover hummus stored in an airtight container in the refrigerator for up to 5 days.
Notes
* This hummus thickens up as it cools. If you prefer a thinner hummus, you can add a little water and re-blend.
