Description

If you're a fan of oatmeal raisin cookies, you're going to love these gluten-free, plant-based No-Bake Oatmeal Raisin Protein Cookie Dough Bites. They're a quick and easy snack to keep you energized throughout the day and the perfect way to satisfy your sweet tooth.


Ingredients

  • 2 cups quick oats*
  • 1/2 cup raisins
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 tablespoon chia seeds
  • 1 tablespoon Naked Pea Protein Powder
  • 1/2 cup sunflower seed butter (or other nut/seed butter)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup maple syrup
  • 2 tablespoons plant milk

Instructions

    Whisk together the oats, raisins, salt, cinnamon, chia seeds, and Naked Pea Protein Powder then add the sunflower butter, vanilla, and maple syrup. Stir together to create a dough. Stir in the plant milk. Cover and refrigerate for 30 minutes. Using a tablespoon, scoop and press into balls. Keep them stored in an airtight container in the fridge.

* I used One Degree Organic Foods sprouted quick oats for easier digestion.

** I used Naked Pea Protein Powder.

*** It's easier if you just press the dough together into balls rather than roll them.
