Description
This homemade Maple Cinnamon Sugar Pumpkin Seed Brittle transforms fresh pumpkin seeds into a sweet, crunchy Fall treat! Made with maple syrup, cinnamon, and coconut sugar, it’s a delicious way to use seeds from carving pumpkins.
Ingredients
- 2 1/2 cups fresh raw pumpkin seeds, cleaned and rinsed
- 3 tablespoons vegan butter, melted
- 2 tablespoons pure maple syrup
- 3 tablespoons coconut sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
Instructions
- Remove the pumpkin seeds from your freshly carved pumpkins and separate them from the stringy pumpkin pulp. Rinse thoroughly in a colander.
- Pat the seeds dry with a clean kitchen towel and allow them to air-dry in a single layer on a baking sheet for at least 30–60 minutes to remove excess moisture. I let mine dry overnight.
- Preheat the oven to 300°F and line a large baking sheet with parchment paper.
- Spread the pumpkin seeds in an even layer and pre-roast for 15–20 minutes, stirring halfway through.
- Meanwhile, whisk together the melted vegan butter, maple syrup, coconut sugar, cinnamon, vanilla extract, and sea salt in a large mixing bowl.
- Add the warm pumpkin seeds to the bowl and toss until evenly coated.
- Return the coated pumpkin seeds to the prepared baking sheet, spreading them into an even layer.
- Roast for an additional 25–30 minutes, stirring gently halfway through, until the seeds are golden and the coating is bubbly & caramelized. Don’t over-roast to prevent burning- the maple cinnamon sugar coating will harden and set up as it cools.
- Remove from the oven and allow the pumpkin seeds to cool completely on the baking sheet.
- Once cooled and firm, break into clusters or brittle-like pieces and enjoy!

The coating may still appear gooey immediately after baking but will firm up as it cools.
For larger brittle pieces, gently press the seeds together after the final stir and leave them undisturbed while cooling.
Roasting times may vary depending on the moisture content and size of your pumpkin seeds.
