Description

Elevate your morning breakfast with this Hash Brown Avocado Toast! Top your favorite hash brown patties with avocado, roasted brussels sprouts and broccoli then season with everything bagel seasoning and vegan parmesan cheese. Garnish with fresh microgreens for the perfect finishing touch.


Ingredients

  • Frozen hash browns (I used Strong Roots Cauliflower Hash Browns!)
  • 12 tablespoons olive/avocado oil
  • 12 avocados, sliced/mashed
  • broccolini/broccoli florets
  • 1 cup brussels sprouts, sliced in half
  • everything bagel seasoning
  • vegan parmesan cheese
  • microgreens

Instructions

  1. Make the hash browns according to package directions.
  2. Heat a large skillet over medium heat. Add the oil. Sautee the broccoli and brussels sprouts, tossing occasionally until they are soft and tender, but not mushy, then set aside
  3. Slice/mash your avocado.
  4. Add the sliced/mashed avocado on top of the hash browns, then top with sauteed brussels sprouts and broccoli.
  5. Sprinkle, to taste, everything bagel seasoning and vegan parmesan cheese over top.
  6. Garnish with fresh microgreens.
