Description
This Curried Cauliflower with Tofu, Red Bell Pepper and Peas is a cozy, flavor-packed plant-based dinner made with tender broiled cauliflower, sweet red bell pepper, tofu and green peas simmered in a rich coconut tomato curry sauce. Serve this easy vegan cauliflower curry over rice, alongside gluten-free naan, or enjoy it all on its own for a satisfying weeknight meal.
Ingredients
- 2 tablespoons olive oil, divided
- 1 large head cauliflower, cut into florets (about 4 cups)
- 1 red bell pepper, seeds removed and diced
- 1/2 yellow onion, diced
- 3 garlic cloves, minced
- 1 teaspoon salt, divided
- 16 ounces pre-pressed extra-firm tofu
- 1 cup frozen peas
- 2 tablespoons red curry paste
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1 (14-ounce) can coconut milk
- 1 (15-ounce) can tomato sauce (not jarred pasta sauce!)
- Pinch pepper, to taste
- Fresh cilantro, chopped, for serving
- Rice and/or gluten-free naan, optional for serving
Instructions
- Preheat the oven broiler. Line a large baking sheet with foil. Add the cauliflower florets and chopped red bell pepper. Drizzle with 1 tablespoon olive oil and season with 1/2 teaspoon salt. Toss to coat and spread into an even layer. Place the baking sheet under the broiler and broil in the oven until the cauliflower is tender and the vegetables develop lightly browned edges, tossing halfway through. Watch them carefully to prevent burning.
- Meanwhile, heat the remaining 1 tablespoon olive oil in a large skillet or sauté pan over medium heat. Add the diced onion and cook until softened. Add the minced garlic and sauté for about 30 seconds, until fragrant.
- Break the tofu into the pan in medium-large pieces and add the remaining 1/2 teaspoon salt. Sauté for several minutes, gently stirring occasionally, until the tofu is warmed through and lightly golden in spots.
- Add the red curry paste, curry powder, cumin, coriander and turmeric. Gently stir until the tofu and onions are evenly coated.
- Pour in the coconut milk and tomato sauce. Stir well to combine and bring the curry to a gentle simmer.
- Stir in the frozen peas and simmer until the peas are heated through and the sauce has thickened slightly.
- Fold the broiled cauliflower and red bell pepper into the curry, gently stirring until everything is coated in the sauce.
- If you prefer a thinner, more brothy curry, stir in 1/4 cup water or vegetable broth at a time until the sauce reaches your desired consistency (but not too much to dilute the curry flavor).
- Add a pinch of pepper and simmer for another 2–3 minutes, then remove from heat.
- Garnish with freshly chopped cilantro and serve warm over rice, with gluten-free naan, or as is.

Curry Spice: This is a very mild curry. Feel free to add more spice if desired.
Curry consistency: This is intentionally a thicker curry with enough sauce to generously coat the tofu and vegetables rather than a soupier curry. Add water or vegetable broth for a thinner consistency.
Tofu: Pre-pressed extra-firm tofu makes preparation especially easy. If using tofu that hasn’t been pressed, remove as much excess moisture as possible.
Broiling: Broiler temperatures and distances from the heating element vary, so watch the cauliflower and bell pepper closely and remove them once tender and nicely browned around the edges.
Serving: Rice and gluten-free naan are both great to enjoy with this curry.
