glass noodles, coleslaw mix, cucumber, mango, cilantro, peanuts, lime juice

cook the noodles, and combine everything together in a large bowl

pour in the  peanut sauce

Toss, garnish with fresh cilantro, grated ginger and crushed peanuts

serve at room temperature or chilled
