Mongolian 'Beef' Zucchini Boats

If you're looking for a healthy and delicious summer meal, these Mongolian 'Beef' Zucchini Boats are the perfect choice! Made with fresh, wholesome ingredients and bursting with flavor, they're sure to become a new favorite in your kitchen. They're low-carb, gluten-free, and vegan!

zucchini shredded carrot olive oil coconut sugar minced garlic red pepper ginger gf soy sauce tapioca flour/starch green onion sriracha sauce

Slice the zucchini in half

scoop out the flesh, leaving a border around the edges

Cook the plant-based ground 'beef'

Add the shredded carrots, chopped red pepper, zucchini flesh and sauce to the skillet

Fill the boats with the filling and bake 25 minutes.

Garnish with green onion and enjoy!
