Unicorn Poached Pears

Ingredients

  • 3 pears (peeled)
  • 6 cups water
  • 2 tsp pure vanilla extract
  • 2 tbsp maple syrup, (optional)
  • pinch salt
  • 1 tbsp Suncore Foods Pink Pitaya Supercolor Powder
  • 1 tbsp Suncore Foods Purple Sweet Potato Supercolor Powder
  • 1 tsp Suncore Foods Blue Butterfly Pea Flower Supercolor Powder
  • coconut whipped topping (optional)
  • sprinkles

Instructions

  1. Peel your pears, but leave the stems attached
  2. In a large saucepan, whisk together water, vanilla, salt and maple syrup and bring to a boil
  3. Add the pears and boil for 15-20 minutes
  4. **NOTE: make sure the pears are covered with the brine
  5. Remove from heat and reserve 1-1.5 cups of brine per pear
  6. Pour 1 cup of brine into each mason jar (or a small bowl alternatively), then add 1 supercolor powder to each and whisk to combine well (try not to have any lumps)
  7. Carefully place one pear in each mason jar (with a wide mouth), then use any leftover brine to make sure the pears are fully submerged
  8. Cover and refrigerate overnight in the liquid
  9. Serve with coconut whipped cream and sprinkles
