These vibrant Grapefruit Chia Seed Popsicles are made with fresh squeezed grapefruit juice, coconut water, maple syrup, chia seeds, and pink pitaya powder for a naturally gorgeous color. 🍊💕 They’re refreshing, lightly sweet, and packed with hydrating ingredients and citrusy flavor. A wholesome frozen treat that’s the perfect summer cool-down treat!
Ingredients
1 cup grapefruit juice, fresh squeezed (approximately 2 large grapefruit)
3 tablespoons maple syrup
1 cup unsweetened coconut water
1/2 teaspoon pink pitaya powder (for a pop of natural color)
2 tablespoons white chia seeds
Instructions
- Slice the grapefruit in quarters and juice them into a glass measuring cup. Next, add the coconut water, maple syrup, and pityaya powder. Finally, add the chia seeds and whisk the mixture well to combine. Let the mixture sit on your counter for about 15-20 minutes, stirring frequently to avoid the chia seeds sinking to the bottom. The mixture will be ready to pour into the popsicle molds when the chia seeds start to absorb some of the liquid and “gel up” a bit and no longer all sink to the bottom.
- Place your popsicle molds on a baking sheet (this helps with transferring them into the freezer and allowing them to lie flat), and add grapefruit slices in the popsicle mold if desired. I used this popsicle mold.
- Insert the popsicle sticks then pour the mixture evenly into your popsicle mold. Place the entire baking sheet into the freezer until firm, preferably overnight and enjoy! Keep them stored in the freezer in a sealed gallon bag or airtight container.
