Description
These No-Bake Date Almond Flour Brownie Bite Turkeys are the perfect sweet treat for Thanksgiving! The no-bake brownie bites are made with black cocoa powder and almond flour and naturally sweetened with dates! The white chocolate covered almond feathers are dairy-free and dye-free.
Ingredients
Almond Feathers
- whole almonds
- 1/4 cup dairy-free white chocolate PER COLOR
- 1/2 teaspoon coconut oil
Brownie Bites
- 16-17 large medjool dates, pitted (about 2 cups)
- 1 cup almond flour
- 1/4 cup black cocoa powder (may use regular cocoa/cacao powder)
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon salt
Chocolate Coating
- 9 ounces dark chocolate chips
- 1 1/2 teaspoons coconut oil
Googly Eyes (if making your own)
- white chocolate chips
- mini chocolate chips (affiliate link)
- coconut oil
Beaks
- orange colored candies (see what I used below)
Instructions
You'll want to make the googly eyes and feathers first. Here is my recipe and instructions on how to make dairy-free, dye-free homemade googly eyes.
To make the almond feathers, melt ¼ cup of white chocolate chips with ½ teaspoon of coconut oil in a small bowl. Stir in color of choice and then using a fork, coat each almond completely in the white chocolate. Let the excess chocolate drip off and then place the almonds on a piece of parchment paper. You will repeat this process for each color you're using.
Pit the dates and add them to a glass measuring cup or bowl and cover with water. Microwave them for 3 minutes. Drain the dates and add them to a food processor. Add the almond flour, cocoa powder, vanilla, and salt. Pulse the mixture until you achieve a smooth cookie dough-like brownie batter. Roll 1 tablespoon of brownie batter into a smooth ball and place them on a parchment-lined plate. Repeat until all of the mixture is gone and then place them into the freezer for about 15-20 minutes.
For the chocolate coating, melt the chocolate chips and coconut oil either via microwave or stove top using the double broiler method. You will need to use a small glass deep enough to fully submerge each brownie ball in the melted chocolate.
For dipping, you'll need wooden skewers to insert into the middle of each brownie bite. Slowly dunk the ball up to the stick. Let the excess chocolate drip off of the brownie and then place it on a piece of parchment paper. Allow the chocolate coating to dry completely before decorating.
To adhere the googly eyes and beak, dot a small amount of melted chocolate on the backs and then adhere them to the brownie bites. It helps to hold the stick while doing this.
Remove the wooden skewers by holding each brownie bite on the bottom and gently twisting the stick to loosen it and then pull it out.
To adhere the feathers, dip the pointy tips of the almonds in melted chocolate and gently press each almond slightly into the brownie bite and hold for 15-20 seconds. I suggest starting with the center feather to cover the hole from the stick and working outward.
Keep them stored on your counter for up to 3 days. You may also store them in an airtight container (being mindful of the feather height!) in the fridge for up to 5 days.
