Matcha Kiwi Nice Cream Bowls

Description

A healthy dessert (or breakfast!) made with frozen kiwi and bananas blended to an ice cream-like consistency mixed with matcha powder and dates, then topped with cookie dough bites, sprinkles, cacao nibs, and bee pollen for an indulgent, naturally sweetened treat!


Ingredients

  • 3 frozen bananas
  • 2 frozen kiwi
  • 2 dates, pitted
  • 1 tsp matcha powder
  • 1/2 cup plant milk (like almond, oat, or flax milk)

Toppings (optional)

  • gluten-free, vegan cookie dough, rolled into bites/ or crumbled (linked below)
  • cacao nibs
  • bee pollen
  • sprinkles

Instructions

Be sure to have 3 frozen bananas and 2 frozen kiwi in your freezer, I recommend freezing them overnight.

  1. Make the cookie dough first if you’ll be enjoying in this recipe.
  2. Then place the frozen banana, kiwi, dates, plant milk, matcha powder, and vanilla in your blender and blend until smooth.
    **NOTE: I suggest adding in little bits of plant milk at a time. You want it to blend nicely and attain an ice cream consistency, but not turn into a smoothie!
    **NOTE: you may need to stop your blender and stir to ensure the frozen fruit gets blended up completely.
  3. Spoon the nice cream into a bowl and top with fresh kiwi, cookie dough bites (or crumbles), cacao nibs, bee pollen, and sprinkles!
  4. This nice cream is best enjoyed right away, but you may freeze it and consume within a day for the best taste.
