These Fudgy Flourless Date Brownies are the perfect way to satisfy your brownie craving in a healthy way. These gluten-free, vegan, naturally sweetened brownies are made with just 5 simple ingredients and using dates as the main ingredient.

- 4 cups dates, pitted (about 39-40 medium to large dates)
- 1/2 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 1/2 cup sunflower seed butter
- 3/4 cup cacao powder (or cocoa powder), unsweetened
- 1–2 tablespoons water (see instructions below)
- dark chocolate chips or mini chocolate chips (affiliate link) (optional)
Instructions
- Preheat the oven to 350 degrees F. Remove the date pits (if they have them). Add the dates to a bowl, cover with water and microwave for 3 minutes to soften the dates. Alternatively you can just soak the dates in hot water for about 20 minutes.
- Drain the dates, but reserve some of the water you cooked the dates in, enough for 2 tablespoons worth.
- Add the dates and the rest of the ingredients to a food processor, and add 1 tablespoon of the reserved date water to start with. Pulse the batter until smooth and no date chunks remain, adding the other tablespoon of water only if needed. I only needed the 1 tablespoon. I suggest to not fully blend the brownie batter because as it blends it releases oil and the brownies will have a slightly different texture (not bad, just different).
- Line an 8×8 baking pan with parchment paper and then spoon the brownie batter into the baking pan. Smooth the batter out until it’s evenly spread in the pan. The batter is VERY sticky, so to help, I sprayed a piece of parchment paper with coconut oil and used that to spread the batter. Don’t flatten the brownie batter too much into the pan for the best texture.
- If garnishing these brownies with chocolate chips, do so now and then bake the brownies for 25-30 minutes. Remove from the oven, cool completely and slice.
