Description

These Fajita Roasted Potatoes are the BEST easy side dish and are made with only 5 ingredients! Toss petit gold potatoes with chopped bell pepper and onion, drizzle with olive oil and sprinkle in your favorite taco seasoning, then roast everything on one pan in the oven for 30 minutes. Serve these flavorful Mexican-inspired potatoes with guacamole and dairy-free sour cream alongside any meal or for your next taco night!


Ingredients

  • 24 ounces (about 4 cups) petit gold potatoes (or you may use regular size, just cut into smaller chunks)
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 orange or yellow bell pepper, chopped
  • 1 cup sweet yellow onion, chopped (about 1/2 large yellow onion)
  • 3 tablespoons olive oil
  • 1/4 cup taco seasoning (I used Siete Foods Mild Taco Seasoning- see below)

For Serving (optional)

  • guacamole
  • vegan sour cream
  • vegan cheese sauce
  • lime
  • cilantro

Instructions

    First, preheat your oven to 425 degrees Fahrenheit. Next, wash and slice the potatoes in half and add them to a large bowl. Add the chopped bell pepper and onion to the bowl.

    Drizzle the olive oil over top and then sprinkle in the taco seasoning. Toss to combine well and coat all of the potatoes with the taco seasoning.

    Spread the potatoes on a parchment-lined baking sheet and then roast in the oven for 30 minutes.

    Enjoy warm with a squeeze of lime juice, side of guacamole and vegan sour cream (my recommendations!). Feel free to garnish with fresh cilantro too, if desired.
