Ingredients
1 can (13.5 oz) lite coconut milk
2 medium-large frozen bananas
2 tablespoons lime juice (about 2 limes)
1 tablespoon lime zest
1/2 of an avocado
1/2 teaspoon pure vanilla extract
1-2 tablespoons pure maple syrup
3 tablespoons gluten-free graham cracker crumbs
1-8-1/4 teaspoon spirulina powder, optional for color
Toppings
Dairy-free whipped cream
Graham cracker crumbs
Lime zest
Instructions
Add all the smoothie ingredients except the graham cracker crumbs to a blender, starting with the coconut milk. Blend on high until thick, smooth and creamy and there are no banana chunks left. Add the graham cracker crumbs and pulse a couple of time just to incorporate them. Pour the smoothie into glasses, top with dairy-free whipped cream (optional), and sprinkle with additional graham cracker crumbs and lime zest.

Make sure you freeze the bananas the night before. I always keep frozen bananas in my freezer for smoothies 🙂 .
This smoothie is best enjoyed right away.
You may use another plant-based milk if desired, however, it may not be as thick and creamy.
