Description

This is the Best Cowboy Caviar Bean Salsa Recipe! Sometimes called Texas caviar, this fresh and nourishing appetizer recipe makes a flavorful addition to healthy dinners or for cookout gatherings. It can be used as a salsa dip with chips or enjoyed with plant-based chicken or tofu as a side dish. This fresh and easy-to-make bean salsa is packed full of healthy ingredients, and is sure to be a crowd pleaser!


Ingredients

Dressing

  • 1/4 cup avocado oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup agave syrup (or maple syrup)
  • 1 tablespoon lime juice
  • 1 teaspoon salt

Salad Ingredients

  • 1 (15 oz) can kidney beans
  • 1 (15 oz) can black beans
  • 1 (14.5 oz) can petit diced tomatoes**
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 1/2 cup corn (canned or frozen***)
  • 1/2 cup mango, diced (about 1 large mango)
  • 1/4 fresh cilantro, chopped

Instructions

    In a bowl or measuring cup, whisk together the olive oil, apple cider vinegar, agave syrup, lime juice, and salt. Set aside.

    In a large salad bowl, add all of the chopped ingredients and the dressing, and gently toss with a spoon or salad servers. Season with salt, to taste and enjoy with chips or as a side dish with your choice of protein.

    Optionally, cover and chill until ready to serve.

Notes

* This Texas Caviar is best served fresh right away, however, you may make this a few hours ahead of time. Keep it covered and stored in the fridge, and leftovers are good for up to three days.

** Be sure to drain and rinse the tomatoes well before adding to the dip. You may also use fresh diced tomatoes- I used canned for ease.

*** If using frozen corn, place 1 ½ cup of corn into a bowl and cover with water. Microwave on high for 1 minute, drain and then add to the salad.

**** You may use pre-diced produce if you can find it at the grocery store.
