You'll get major cinnamon churro vibes from this crunchy sweet treat! These Cinnamon Sugar Pizzelles are so delicious and easy to make! The gluten-free, vegan pizzelle batter is made with simple ingredients, cooked in a pizzelle maker and then coated in cinnamon sugar for the perfectly crispy cookie waffle for holiday parties!
Ingredients
- 1 flax egg (1 tablespoon flaxseed meal + 2.5 tbsp water)
- 2 cups plant milk (oat, rice, almond, coconut, etc.)
- 3 cups gluten-free flour
- 1/2 cup coconut sugar (may use brown sugar if desired instead)
- 2 tablespoons cinnamon
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 teaspoons pure vanilla extract
- 1/2 cup vegan butter, (melted)
Cinnamon Sugar Coating
- spray oil, such as coconut oil
- 2 cups organic cane sugar
- 4 teaspoons cinnamon
Instructions
- Heat your pizzelle maker. While the pizzelle maker is warming up, make the flax egg by combining the flaxseed meal with water and letting it “gel” up.
- Next, add all of the other ingredients to a blender starting with the milk. Blend all ingredients until you achieve a pancake-like batter, the mixture should be thick, but if you need to, add another splash of milk.
- Add a tablespoon of batter for each pizzelle, close, and cook for about 2-3 minutes. ** NOTE: cooking time will vary depending on your pizzelle maker. Gently remove the pizzelles with a fork and lay them flat to cool, they will crisp up as they cool.
- Next, make the cinnamon sugar coating by combining the sugar and cinnamon in a large, shallow bowl. Stir until the cinnamon is mixed in with the sugar completely. Working with one pizzelle at a time, spray each side of the pizzelle with the spray oil and then coat on each side with cinnamon sugar.
Storage: store the pizzelles in a covered glass or tin container, not plastic, to keep them crunchy.
Notes
** NOTE: don't spray too much oil on the pizzelles or they will lose their crunch. Just give them a light coating so that the cinnamon sugar will stick. Alternatively you can lightly brush oil on them with a pastry brush.
